Rosemary Ranch Chicken Kabobs
This makes delicious, moist chicken kabobs, but have to be careful because my husband always thinks they cook faster than they really do, and we've had a couple thicker pieces that were underdone. Taste great on salad or served along baked potatoes, or rice & a veggie!

Banana Crumb Muffins
I doubled the recipe but didn't quite have enough bananas, so I subsituted about 1 cup of cooked mashed sweet potato I needed to use up. They were very moist, maybe not as sweet as they would have been with all banana, but delicious just the same. The crumb topping wasn't the most crumbly, but I took them to some friends, and everyone thought they were great. Will definitely hang on to this one!

Chocolate Zucchini Bread II
I took the advice of other reviews and used 1/2 applesauce, and half oil. Omitted the nuts & chocolate chips because I'm not fond of them in my bread/muffins & only used 1 tsp cinnamon. Made in standard muffin cups, baked about 20 minutes in my convection oven. I also added 2 extra Tbs of the cocoa powder, and had to substitute a 1/2 cup of packed brown sugar because I ran out of white sugar (didn't know I was so low!) All in all I think they have good flavor, they aren't overly moist but aren't dry or crumbly either as some have reviewed. I heat them for about 8 sec each in the microwave and they are very enjoyable. I'll try again sometime maybe with a couple more tweaks.
