Tom Ka Gai (Coconut Chicken Soup)
Just like the restaurants! You can also add a little mushrooms, or carrots to bulk up the soup a little but it's great the way it is! I also like to add in a can of diced tomatoes and a TBSP of curry sometimes. Very easy to prepare and DELICIOUS!

Boilermaker Tailgate Chili
Well I'm FROM Texas and this is a GREAT chili!!! It was really easy to make, just cook the meat and onions, drain, and toss the rest in a pot to simmer for the afternoon. For anyone who complains about the ingredient list, it's pretty much the majority of the savory spices in your spice rack. I didn't really measure (never do) so it didn't take long at all to dump it all in and start it simmering. I did add a splash (tbsp?) of liquid smoke on a whim, but it didn't NEED anything. I didn't have bacon bits so I left that out, but next time I'll toss it in if I have it. Definitely will be making this again, what a hit! Oh and for the 'traditional' feel, try it with sweet cornbread instead of corn chips. SO GOOD!

Lentils and Rice with Fried Onions (Mujadarrah)
Budget friendly and DELICIOUS! I honestly didn't realize there was a recipe for this, as we've been making it as a weekly staple in our household for so long! I stumbled onto this digging for more yummy lentil recipes, and couldn't pass up encouraging everyone to try it! This is pretty much how I make Mujadarrah, sometimes I toss in curry powder or coconut milk for added 'oomph'. SUCH an easy dish to make, the height of convenience food without the ingredients! We'll definitely try a dash of cinnamon next time just for fun, I'm sure it'll fit in perfectly. Thanks for taking the time to share this, I hope everyone gives it a try!
