Baked Ziti I

My wife has used this recipe many times. She makes it in 2 separate containers. This is enough for 2 dinners, putting 1 in the freezer. The only thing is she ads a can of olives. (my preference) This is one of my favorites to take to our summer cottage. She doesn't want to spend time in the kitchen. Loaf of crusty bread, a ready made salad and she has dinner in minutes. I give it 10 stars.

Old Fashioned Potato Salad

I prefer more mayonnaise, not sure about that much onion. I added a tablespoon of vinegar & 2 tablespoons of oil. Makes it much more moist. I have put sliced olives for my grandkids. I guess I prefer my moms the most.

Vegan Chocolate Cake

This one is an old favorite of mine. Mom's recipe is about 65 years old. Had to rewrite it several times to preserve her book. She made it in a square pan shifted dry ingredients into pan dug 3 wells one for vanilla, one for vinegar and one for oil. Poured water over it and mixed well. Mom has her own butter cream frosting made with stale coffee as its liquid. If we were exceptionally good she would use the leftover icing for gram crackers and freezes them for a treat. No store bought cookies for us. Glad to see the"old favorites" are around for the younger generation to enjoy.

Broccoli, Rice, Cheese, and Chicken Casserole

My wife tweaked this a bit. We are not fond of instant rice. She makes a large batch of rice in our rice cooker to make another meal. She put all the wet ingredients in a bowl then 2 cups cooked rice ads the cooked chicken and the broccoli holds the cheese for the top puts into 2 pans cook's one and freezes the other for another week no cook days . I love this one.
