Sunday planing

So it's Sunday and I have to figure out what to feed my family. We decided to eat vegan/vegetarian during the week. Small background info. My husband is a diabetic, my oldest daughter is 14, and the youngest 12 is autistic.  Wish me luck. 

So Monday will be soup
Tuesday will be black bean salad
Wednesday will be Quena salad
Thursday will be lentil with vegetable 
Friday will be baked fish

So it's Monday and I made Chunky Vegetarian Vegetable Soup. It looks and test great. I added a fresh squeeze of lemon just before serving and it tasted amazing. Hubby loves it :-) so that 1 point for me. Now to pick up kids and see how they like it.

So jealous. I cook every day for my Dad and the only thing he really hates is broth soups. :( But it's such a perfect thing this time of year!!! Can't wait to hear how it goes. BTW used to work in So Cal. Was a water quality microbiologist and did a lot of work in Marina del Rey. R u anywhere near there?

Yes. I'm close to culver city. Jackie the 14 yr old loved it. Ariel 12, eat it and asked where's the rest of the food. :-) but she eat it.

Pasta primivra(sp) with Alfredo sauce would be a satisfying meal with lots of fresh vegetables in it.

That sounds so good. But that will be weekend food. We try to eat really healthy vegan/vegetarian and organic most of the time. Weekends and holidays spoil our selfs. But your pasta idea sound really good. I think I will try it soon. Thank you.
