Cauliflower Soup

What a tasty and easy soup. I steamed the cauliflower and then used an immersion blender to puree it. Followed the rest of the recipe and added the cauliflower at the end. The perfect blend of smooth, chunky and delish!

Slow-Cooker Chicken Tortilla Soup

Excellent!! I used the 10 Minute Enchilada Sauce recipe on this site instead of canned and added a can of drained black beans. Soooo delish...can't stop eating it and so simple to make.

Rice with Black Beans

Yummy, nutritious and delicious! Just a few changes: used brown rice and added cumin, paprka and 1/2 cup shredded sharp cheddar. So easy and so tasty!

Zucchini Tomato Soup II

This is soooo delicious!! Only changes I made are I used 3 large tomatoes (about 2 cups) and used fresh herbs including a little cilantro and put them in the blender with the veggies. Will definitely be making this again soon. Give this a try...you won't be disappointed.

Virginia Apple Pudding

This is an all-star in my recipe box. I've made this many times as stated but today I changed it up a little. Used 1/4 C. butter, 1/4 C. white sugar, 1/2 C. dark brown sugar and added 1/4 C. golden raisins and 1/4 C. dried cranberries. Consistency was more like moist bread pudding & the taste is terrific!!! Love the original recipe and just thought I'd pass along these variations.

Baked Ziti I

This is the best baked pasta I've ever had. I wasn't sure about the sour cream so only used 1/2 of the amount & mixed the pasta & sauce before layering and it turned out perfectly. It's so creamy you won't believe it and tastes great!! Baked it covered 20 mins then took the foil off for 10 mins....very juiicy. I'll never make baked pasta any other way. Thank you!!!

Delicious Black Bean Burritos

I thought the nutrition info looked high too but I checked all of the ingredients and came up with 690 calories and 34.8 grams of fat (close enough). This recipe is only for 2 servings so per serving: tortilla is 210 cal & 5g fat, veg oil is 124 cal. & 14g fat and cream cheese is 149 cal. & 14.85g fat. I hate when something that sounds so good and easy isn't so healthy :-( Would be easy to modify to reduce calories & fats.

Sarge's EZ Pulled Pork BBQ

Love this! Couldn't get any easier or taste any better!! I rubbed it with seasoning salt, pepper & garlic powder & 10 hrs. later I pulled it...soooo tender & then added Sweet Baby Rays. Served this at a BBQ and everybody raved about it and went back for seconds!!!

Zucchini Pineapple Bread I

I've been making this recipe for years. I only use 3 eggs and 1/2 cup of oil. Leave a little juice with the pineapple when draining it and then the bread will be moist. I've also added a handful of fresh blueberries (delish) or walnuts and/or raisins...it all works. It's also good with a simple glaze drizzled on it. This is a winner!!!!

Spinach and Leek White Bean Soup

I just made this...so easy and so tasty. Like others, I added more chicken broth, a little celery and put the spinach in the bowl and poured the soup over it. DELISH!!! Will definitely make this again!! Thank you!
