Quick and Easy Green Chile Chicken Enchilada Casserole

This was pretty good! I would use left over chicken rather than to bake chicken breasts. I had a whole roast chicken left over from Costco that we hadn't gotten to and needed to figure out something to do with it. I used the spicy green chile sauce and chopped in some green onions to give it some zing. To cut down on fat, I used greek yogurt instead of sour cream. Topped with cilantro when it came out of the oven. Tasted great!

Pumpkin Chocolate Chip Cookies III

Really Tastey! As one reviewer said, these are meant to be cake-like. These are so much better than the ones they sell at Ralphs. I used 1 tsp of cinnamon, 1/2 tsp nutmeg and 1/2 tsp cloves to give it more of a pumpkin pie taste. AWESOME!

Juicy Roasted Chicken

My hubby said that this was the best roast chicken ever! It ruined El Pollo Loco for him. Costco chickens are great, but be sure to increase the cooking time as these tend to be bigger birds. I added rosemary to the cavity and also put some of the butter under the skin at the top and the bottom of the breast along with additional rosemary. Perfect!

Pear Butter

Came out great! Like another reviewer I just threw everything in the crock pot. I only used 1 cup of brown sugar and added more after it was done cooking to taste. Also, after the pears cooked, I took a turkey baster and removed most of the liquid. Then I pureed using the hand blender. It was still a bit runny so I put the crock pot back on high and left the lid off for an hour and most of the liquid evaporated. Nice thing about the remaining liquid is you can save it for your next batch...or use it in your baking for whatever calls for water.

Bavarian Apple Torte

So fresh! I took it to the coworkers and it was gone in 5 min! I make it the night before baking it on top of a pan to catch any leaks, then let it sit in the oven overnight as the oven cool, then popped it in the fridge for a couple of hours. It cuts better after being chilled.

Roasted Garlic Lemon Broccoli

Tasty! I used fresh broccoli and instead of tossing the veges in seasoning, I just cut the broccoli into chunks, covered a baking sheet, drizzled oil, tossed on some salt, pepper and garlic powder and roasted it.

Fresh Cherry Cobbler

This is a great recipe! Best to use a cherry pitter though to make the job easier. Also recommend cutting back on the sugar otherwise it's a bit too sweet.

Barbecued Beef

Awesome! It's gone every time I make it! The cut of beef you choose will make a big difference. If you use a fatter cut, you should use a shallow spoon and spoon our all the oil before you shred the beef. Otherwise, it will be too oily. The sauce will be a bit runny, but add some cornstarch mixed with a bit of water, or flour or some other kind of thickener and it'll be just fine. You may need to add some more spices at the end for your taste. I use chili pepper flakes and a bit more sugar to round out the taste.

Bake Sale Lemon Bars

This is a great recipe! My husband loves it!! Tip: If you buy lemons at your local farmers market or pick them off your tree, this recipe tastes super fresh!! The quality of the lemons will make a difference!! I typically double the lemon juice and halve the sugar amount to have extra lemony bars.

Watermelon Fire and Ice Salsa

This is actually pretty good! Definitely drain watermelon first after cutting otherwise you'll get too much liquid. I found the original recipe kind of bland so I doubled the salt, added chopped garlic (didn't have garlic salt), and doubled the lime and jalapeno. My husband says it's missing pico de gallo seasoning. Will have to try that next time.

Blackberry Cobbler

If you're looking for a gooey filling topped with crusty cake, then this is NOT the recipe. This came out more like a biscuit. The sides were really tasty b/c it was crunchy. But the middle was kinda bland. I wouldn't make this recipe again.

Poppyseed Dressing

This is great!! Very yummy on any salad. I tossed it w/ a green salad w/ soy beans, pine nuts, orange wedges and sliced chicken. My hubby loved it and ate it all up (when he usually grimaces when he realizes that I made salad). This a great dressing for those who are trying to eat healthier or introduce veggies to their diet.

Ramen Cabbage Salad

Very tasty salad. Even my hubby likes it! I add extras to this salad i.e. almonds, sesame seeds, mandarin oranges, chopped green onions and cilantro. Pretty much anything goes. To make this salad into a meal, stirfry some spicy marinaded beef or chicken and serve on top of the salad.
