Cranberry Waldorf

One of my favorites - found it a few years ago while making a Thanksgiving dinner (for 60 ppl) in Japan. Many of my students loved it and asked for the recipe. It's been a regular ever since.

Apple Cake and Butter Sauce

Always popular when I make it. Excellent without the sauce as well (which is very sweet). A food processor really helps with grating the apples. I also cube about 1/2 an apple - leaves wonderful chewy bits in the cake.

Spinach and Feta Pita Bake

Love it! It's become a regular. I prefer the basil pesto and goat cheese. Chopping spinach makes it easier to bite into, but harder to stack ingredients. I also cut out the oil and it turns out fine. Definitely not a full meal, but perfect for a light lunch or served with heavier sides. Made bite-sized on miniature pitas from Trader Joe's (about 2" diameter). Served for bridal shower - wildly popular.
