Chicken Breasts Stuffed with Perfection

Wow, this was really incredible. I only had two chicken breasts and no sun dried tomatoes, so had to tweak just a bit. Not much moisture left in pan after sautéing garlic and spinach, so I added a tad of butter to the mushrooms which I chopped instead of slicing. I thought the smaller pieces worked better for rolling up. Butter added a nice complimentary flavor. Added a couple chopped marinated artichoke hearts instead of tomato. Fantastic! Thanks, pregocook. Can't wait to make more!

Almond-Topped Fish

I thought this dish was delicious! I almost never take seconds, but this made me want thirds! I used cod. It was moist and flakey. The only reason I could see why someone would not care for this dish is if you prefer your fish firmer (like Grouper) and dry (many people overcook fish). I use the thicker part of the cod for this recipe and save the thinner piece for pan-frying. Thank you for posting, Heidi!

Mock Filets

DH stopped by house on his way to the local sportsbar to watch football with the boys. After smelling the end of the cooking, he thought he'd have a taste. He was late meeting the boys! (teenage son was happy, too!) Only change was to add a little crushed garlic and two dashes of worchestershire. Bacon was mostly pre-cooked. Good and quick! Thanks for sharing!

Caramelized Baked Chicken

Wonderful! My children loved this and so did I! I followed everything except I used low-sodium soy sauce and did not add salt (my blood pressure is up!). Didn't miss it! Also, I've made this more than once with different cuts of chicken -- all turn out terrific -- but turning once or twice during cooking is a good idea to keep the top from burning. I serve it over rice with the sauce. Brown rice to add some health! (no one noticed!) Yum!
