Garlic Feta Dip

Tasty Lentil Tacos

When my husband first suggested we make these, I was like, "Lentil tacos??? (Yuck)" Fortunately, they are amazing, and generally how we eat tacos now. I add about 1/2 tsp cayenne.

Authentic Enchiladas Verdes

These are AMAZING!!!! If I use chicken bouillon, I leave out the salt, otherwise I do everything the same. Every person we have served these to has asked for the recipe!

Feta Cheese Turkey Burgers

These were so good! I didn't have kalamata olives, so I used Trader Joe's Olive Tapenade Spread instead - it worked great! I served them on quartered pita bread in leu of buns. Sublime!

Potato Chowder Soup I

Easy Decadent Truffles

So easy! My husband did the melting, and I did the mixing and rolling. :o) These are so good, and the take very little time to make. I used peppermint extract (my husband loved these) and almond extract (I'm partial to these). They are superb!

Make-Ahead Mashed Potatoes

I made these for Thanksgiving, and they were great! I used 4 Russet potatoes and 4 red potatoes, leaving the skins on. I added a few cloves of garlic, and used only 1 cream cheese package (the potatoes looked good after adding just 1). I also used 8 oz plain yogurt for the sour cream. I tried reheating in crockpot, but next time will cook in oven. Great leftover!

Quick Quiche

Wonderful!!! I doubled the recipe and put in a 9x13 pan. I cooked the bacon and shredded the cheese the night before, then did the rest in the morning. It cooked for longer than the time stated - probably double the time. I used cheddar for swiss; added broccoli and mushrooms, used about 2 slices less bacon. Even the leftovers were great!

Double Chocolate Mocha Trifle

This is amazing! I've followed the directions for fixing the sauce given by others, and it always comes out wonderful. I have switched it up a couple times like this - At Christmas time, I used creme de mint instead of coffee, and candy canes broken up instead of toffee. Also, once I had left over lemon bars - I used those instead of brownies, strawberry syrup instead of coffee, and left off the toffee. It always goes over well.

Sage Pork Chops

This was AMAZING! I followed other's advice and did this: Used boneless pork chops and omitted salt (used garlic and b pepper instead. After cooking I removed the chops from the pan and thickened the juice with 3 Tbsp cornstarch mixed with 3 Tbsp cold water making a thick, brown gravy that had a great flavor. I varied using rosemary and thyme instead of sage. Used "Better Than Bouillon" over dry cubes - it is more a beef stock reduction than cubes. Used 1.5 inch thick chops and simmered for 30 minutes.

Peking Pork Chops

Added Sriracha to up the "kick". Used low-sodium soy sauce like others suggested. Halved recipe and made in mini crock - worked wonderfully.

Peanut Butter Noodles

This is great! I've made it twice: the first time I used ground ginger, linguini no chili paste, no green onions, no peanuts (but chunky peanut butter), and it was great, but needed a kick. The second time, I used fresh ginger (much better), chili paste (found in the ethnic section - named "Thai Chili Garlic Paste") it definitely added some kick), and thin spaghetti (I think the linguini was better). I doubled the sauce, and added some chicken the I had cooked with cracked pepper. It was amazing, and I will continue making this.

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

I do not care much for pork, but this recipe was very good. I also used a can of tomatoes in lieu of the fresh tomatoes since I had none. Turned out wonderfully. Be sure that the pork chops are fully cooked when you serve it.

Phenomenal! Super easy. I mashed the potatoes and garlic with a fork! Even though I love feta, I didn't use as much as the recipe called for, and it was amazing.

Tofu Parmigiana

Pumpkin Bread IV

Wonderful! I've made this multiple times - everyone loves it! To make slightly healthier, I use half whole wheat flour, and half regular flour (because it is so moist, there is no taste difference). To make slightly unhealthier, I put cream cheese frosting on the muffins - Yum!
