Black-Eyed Pea Gumbo

Made this for a Mardi Gras potluck at work and it was a hit! We already had a rice dish so I omitted the rice and then added about 1 TBSP of sea salt for flavor. I also used dry beans (vs. canned). Didn't think it needed other flavor besides a little salt however a few shakes of hot sauce adds extra yum. This is a great low-cal and high protein/fiber meal, too. Awesome.

Super Easy Chicken and Dumplings

I didn't make the exact recipe as is (just used more broth and no cream of chicken; used canned chicken and then fresh carrots & celery). I mostly wanted to comment on the dumpling idea. GENIUS! My husband said they were a little slimey to him, though he liked the soup very much and they still tasted like old-fashioned dumplings to me. I was looking for something fast, and all of the other dumpling soup recipes required hours. This was a breeze! Thanks for the idea!

Peanut Butter Crunch Bars

Rich and delicious and the corn flakes added a nice crunch. You could also make these into a ball-form (just add a little parafin to the chocolate). YUM!

Hot Shredded Chicken Sandwiches

Very easy! I was short on time for dinner and found this recipe. It whipped up in minutes. I used canned chicken. I didn't have enough Ritz crackers on hand so I used saltines and added light butter. I also added about 1 cup of chicken broth to thin it out. I like chicken sandwiches MUSHY (and runnier) and this was perfect. My picky 2-year-old daughter loved it too.

Strawberry Tiramisu for Two

I've made this several times and it's so delicious. It's time-intensive but any tiramisu is, so you have to expect that. It's a nice break from chocolate and you can't put the fork down.

Grilled Chicken Burgers

Awesome recipe! I also made a few adjustments to mine based simply on ingredients I had/didn't have. A little less onion, garlic powder vs. whole, no tomatoes (to prevent a runnier burger), all-purpose seasoning (vs Old Bay) and ground turkey. Still pretty awesome. My father in law, who is a pretty hardcore red meat guy, even complimented me on them (he also had never had a turkey burger before). I really liked the flavor and the substance. I will absolutely make these again!

Special Buttercream Frosting

FANTASTIC! I didn't have cream so I used 2% and it's probably not as fluffy as it should be but still delicious. I also didn't add the salt because my butter/shortening was salted. Can't wait for my guests to try it.

this is the first and ONLY roast i've made that turned out juicy and fall-apart delicious! i didn't have lipton soup mix but i just spiced it up on my own and was fine. will definitely make again AND use the lipton!

Cilantro-Lime Rice

Good. I eliminated the bouillion completely based on others' feedback. Was a bit tangy with the lime but I ended up stuffing it into enchiladas instead of using it as a side dish and it added nice flavor.

Beef Enchiladas II

I completely modified this to the point that it probably was another recipe! Did chicken instead of beef, canned enchilada sauce vs. packet, and whole wheat tortillas. Plus I left off the olives (husband doesn't care for them). It was great. I'm sure the beef w/onions would be great, too.

Downeast Maine Pumpkin Bread

Superb!!! I used fresh pumpkin for this and it still tasted amazing. Moist and mouth-watering, just like a bread should be. The cloves were a little overwhelming to the nose but it didn't seem to overpower the taste. Highly recommended.

Butterscotch Apple Cookies

my husband is a cookie guy and he voted these the best i've ever made, which is a huge compliment! i followed everyone's advice to nix the frosting, add more apples (and no juice) and decrease the butterscotch chips to 1 cup and they were so moist and chewy that they just fall apart & melt in your mouth! absolute perfection!
