Awesome Slow Cooker Pot Roast

This pot roast was wonderful! I used a 3lb roast, seasoned it with salt, pepper and fresh garlic, seared it in about 1 tbsp vege oil, and substituted beef broth for water. I also added 1/2 large white onion, sliced, to the gravy. Best I have ever had!

Mustard Greens 'n Beans

These were great. I sautéed 6 slices of good smokey bacon in the olive oil and then proceeded with the rest of the recipe. I also doubled the liquid as we like our greens in a little broth. I will definitely make these again.

Buffalo Chicken Burgers with Blue Cheese Dressing

These were excellent! I grilled them indoors on a grill pan and it worked perfectly. Not sure how they would have held up on grill grates though, they were a little mushy but firmed up with cooking. I used Franks Red Hot buffalo sauce and added a bit of garlic, salt and pepper. Omitted the cayenne due to families taste but I think this was unnecessary as we all ended up dipping the sandwiches in the buffalo sauce (incluing my 5 yr old who at 1 1/2 of these!!) I will be making these again as I no longer need to go out to fulfill my buffalo cravings!

Southwestern Egg Rolls

These were great. They yasted exactly like the restaurant version. I used flour tortillas and baked at 450 degrees as some other reviewers mentioned.

Caesar Salad Supreme

This is my favorite caesar salad dressing! I dont make the croutons, just the dressing and I leave out the anchovies only because I never have it on hand, but Im sure they would be great. I have made this with both regular mayo and also 1/2 light and 1/2 regular and I actually prefer that lighter version better- not as thick.

Amish Potato Salad

I thought this was great! I cant stand potato salad thats straight mayo. This is sweet and tangy. The only change I made was to shred my carrots instead of chopping them. I think this will be my new go-to recipe for potato salad.

Shanghai Noodle Salad

This was really tasty- my 5 year old son had seconds! I halved the recipe, but made all of the dressing and marinated some chicken thighs in the sauce then grilled them. Very good. I will make this again.

Mama's Asian Chicken and Rice

This was excellent. I substituted the ginger for the five spice powder, but I will try it next time as stated. I also omitted the orange peel since I didnt hav an orange, but I think I may use lemon zest next time instead because I can see where something was missing. I also dusted the chicken with cornstarch prior to cooking for a nice authentic look.

Blueberry Cream Muffins

Well, my husband said it was the best blueberry muffin he's ever had! I was force to substitute about 1/4 C of the sour cream with vanilla yogurt because I was low (I halved the recipe so I used about 3/4 C sour cream). I also added 1/2 tsp baking powder in addition to the soda. I topped with a crumb topping and baked at 375 (convection) for about 22 minutes. Wonderful! UPDATE: Made the full recipe with all sour cream and addind extra baking powder and they were even better.

Tuna Noodle Casserole from Scratch

Let me start by saying that Ive never had tuna noodle casserole before... I grew up in a family of casserole haters, especially tuna! I loved it! I can honestly say that if it had a can of soup in it, Im sure I would have felt differently. My husband enjoyed it as well as our 3 year old. I will be making this again.

Buttery Soft Pretzels

I made these as written in the bread machine on the dough cycle. After they were dipped in the baking soda mixture, I brushed them with melted butter and sprinkled with kosher salt. I finished them off with a drizzle of butter when hot out of the oven. Incredible!

Perfect! I make my own shortbread, coconut, and macadamian nut crust, and top it with stabilized whipped cream and sprinkle with chopped macadamian nuts. It's heaven!

Butter Frosting

This was perfect. I used about 4 cups of sugar and it was the perfect consistency for piping. I also added 1t cinnamon for chocolate mocha cupcakes with cinnamon buttercream frosting. UPDATE: when I served my cupcakes directly out of the refrigerator, the icing was very dense. In my experience, it's best to pull it out about an hour before serving and allow it to soften a bit.
