Chicken Noodle Casserole I

This was good and it used ingredients that I almost always have on hand. The reason that I gave it 4 stars and not 5 was because I think next time I will use seasoned breadcrumbs in place of the cracker crumbs- I thought it was a little bland and I will either use all cream of chicken soup or substitute cream of celery or cream of broccoli for the cream of mushroom- the flavor was a bit funny to me. With this said, my husband and 3 year old cleaned their plates so no complaints from them!

Chewy Oatmeal Cookies

This was just what I was looking for! A simple oatmeal cookie... I added some vanilla, but otherwise made the recipe as stated. The reason I gave it 4 stars and not 5 was because I made the first batch by rolling and pressing the cookies like the recipe instructs and had to reduce the baking time to 8 minutes, but then made the second batch by just rolling them in balls and placing them on the cookie sheet without pressing and then baking for 10 minutes and I got a much nicer looking cookie.

Sweet and Sour Meatballs IV

I really wanted to like this recipe... it smelled good while cooking, but we just didnt like it. It was WAY too tart for us. We dont like overly sweet dishes, but this was much too tangy for our tastes. With that said, I did really enjoy the texture of the meatballs, so I think I'll use the meatball recipe with a different sauce.

Bran Flakes Muffins with Raisins

Substituted brown sugar for the white and increased it to 1/3 C. Also baked for about 15 minutes. 30 minutes would have resulted in a pretty dry muffin.

Banana Fritters

Well, I never thought I'd say it but these were better than my grandmothers. They were fluffy and tender on the inside and crispy on the outside. Not too sweet. Perfect! UPDATE: For the leftovers, instead of dusting them with powdered sugar, I shook them in a little cinnamon and sugar mixture and this was wonderful! I think next time I will do this from the start and skip the powdered sugar.

Oatmeal Peanut Butter Cookies III

These were wonderful. I made some changes based on other reviewers suggestions and wish I would have followed the recipe as written. I only made half of the filling and ended up being quite short. I used teaspoons to measure my dough for each cookie and ended up with almost 30 sandwiches (about 10 of which had no icing). I also followed the suggestion to chill the dough for a bit first and this was very helpful. Thanks for a great recipe!

Frosted Oatmeal Bars

I changed this a little to suit my tastes and what I had on hand: I heated the brown sugar, honey and butter in the microwave until melted and then I stirred in the oatmeal, 1/4 C mixed salted nuts, and 1/4 C M&Ms. Pressed them into a dish and chilled. They were so so good...salty and sweet. Next time, for a little texture, I will add wheat germ or ground flax.

Italian Bread Using a Bread Machine

I use bread flour and occasionally add rosemary and black pepper to the dough and then a a little bit of kosher salt sprinkled on the egg wash before baking.

Bran Muffins I

Chicken and Biscuit Casserole

This was a great recipe! I added potatoes and green beans in addition to doubling the veges. The dough for the biscuits was stickey, but turned out perfect. Also, I used 1/2 tsp garlic powder in the biscuits and a tablespoon on dried parsley instead of the basil.

Fresh Broccoli Salad

This was really good...I changed it a bit by substituting a diced apple for the raisins, left out the almonds (although I think it sounds good...I was just out), and I only used 1/4 C sugar. Also, instead of using the red onions raw, I cooked them in the bacon grease until they were just tender; that way they werent too overwhelming. My father in law who hates broccoli, loved this salad!

Key Lime Cheesecake I

I thought this was a very tasty... I altered a little bit: 1/2 C key lime juice, added 1 tsp vanilla and 1/4 coconut to the crust. It turned out beautiful and a man at my husbands work said that I need to quit my job and become a baker... I think that sums it up!
