North German Gruenkohl (Kale) and Sausage

Reviewed: Feb. 22, 2012
We enjoyed this. My husband isn't a huge fan of kielbasa, but had seconds of this and said he would eat it again. I served it over boiled red potatoes. Also, did add ham because I didn't have any, but I can see how it would be tasty.

Salisbury Steak

Reviewed: Feb. 19, 2012
These were really tasty. I only had 1 lb of gb but made the same amount of gravy. My husband said these were just as good as my normal Salisbury steaks, but these were much easier, so I think I have a new recipe!

Marinated Baked Pork Chops

Reviewed: Feb. 19, 2012
This was fine, but it didn't knock our socks off. Probably won't make again. It was easy, but I agree with other reviewers that there wasn't enough sauce, and I only had 4 chops.

Very good. Diced apples instead of slicing them.

Sausage Smothered in Red Cabbage

Reviewed: Oct. 8, 2011
I would give this 5 stars, but because my husband wasnt too fond of it, I had to take it down to 4. I liked the fact that the cabbage wasnt your typical sweet, spiced red cabbage. Cooking the sausage in the cabbage gave it a wonderful flavor. The only thing I did differently was to sautee the onion in the dutch oven first and then just add the cabbage- really no need to dirty 2 pans. I also chopped the cabbage an onion into larger bit size pieces rather than shredding and dicing. Very tasty! Served with pierogies and sour cream.

Roxie's Bran Muffins

Reviewed: Sep. 5, 2011
I used fiber one cereal, substituted canola oil for the butter and added a 1/2 t baking powder and 1 t vanilla as mentioned in other reviews. Next time I plan on using brown sugar and a little extra liquid in place of the honey. These will go on my regular breakfast rotation. They were very good!

White Chocolate Orange Cookies

Reviewed: Aug. 12, 2011
Im giving these five stars because if I had followed the original recipe, thats what they would have been. I followed other reviewers advice and added the juice from the orange. While this did make the orange flavor stronger, this morning the cookies are a little too moisy- like falling apart. Next time I might locate some orange extract and add that in addition to the zest. I did add 1/2 t vanilla for another layer of flavor and I would keep this addition. Overall, a really teriffic cookie! Can wait to make them again and follow the directions. :)

Shanghai Noodle Salad

This was really tasty- my 5 year old son had seconds! I halved the recipe, but made all of the dressing and marinated some chicken thighs in the sauce then grilled them. Very good. I will make this again.

Mock Champagne

Reviewed: Aug. 8, 2011
I got a lot of compliments on this... I didnt make the ring because I dont own a punch bowl (and didnt need 40 servings) so I mixed the white grape juice and the pineapple juice in a pitcher, froze a tall glass of white grape juice and then put it in the mixture. It lasted for a 4 hour party and I even refilled the pitcher once. I served with the ginger ale on the side so guests could "mix" their own drink and then garnished with a frozen blackberry. Very pretty.

Amish Breakfast Casserole

Reviewed: Aug. 8, 2011
If I personally were giving this stars, it would be about 4, but because my guests scarfed it down and went back for seconds and thirds, it gets a five. I made as stated with sausage. I also made an all vegetable, which would have been better had I cooked the mushrooms longer prior to baking- it turned out a little watery. Overall really easy recipe. I made the night before and baked in the morning.

Bill's Blue Cheese Dressing

Very tasty, but very rich! This makes an excellent dip or sandwich topper but I dont think I could use it on a salad, a little too thick for my taste....

Buffalo Chicken Burgers with Blue Cheese Dressing

Reviewed: Aug. 3, 2011
These were excellent! I grilled them indoors on a grill pan and it worked perfectly. Not sure how they would have held up on grill grates though, they were a little mushy but firmed up with cooking. I used Franks Red Hot buffalo sauce and added a bit of garlic, salt and pepper. Omitted the cayenne due to families taste but I think this was unnecessary as we all ended up dipping the sandwiches in the buffalo sauce (incluing my 5 yr old who at 1 1/2 of these!!) I will be making these again as I no longer need to go out to fulfill my buffalo cravings!

Mama's Asian Chicken and Rice

Reviewed: Jul. 20, 2011
This was excellent. I substituted the ginger for the five spice powder, but I will try it next time as stated. I also omitted the orange peel since I didnt hav an orange, but I think I may use lemon zest next time instead because I can see where something was missing. I also dusted the chicken with cornstarch prior to cooking for a nice authentic look.

Pennsylvania Coal Region Barbecue

I have to say, this surprised me. I had a pound of ground beef thawed for chili and no one felt like it, so I made these instead. The only thing I added was a dash of worstishire. My Manwich loving hubby thought they were great and my non-Mamwich loving 5 yr old son thought they were great also.

Kielbasa Stew

Reviewed: Jul. 12, 2011
Well, I had high hopes- I thought this dish was fine, but my husband thought it was too salty (I even cut down salt a bit) and way to acidic, even with the sour cream. The reason it got three stars and not one is because I thought it was decent.

J.P.'s Big Daddy Biscuits

Reviewed: Jul. 2, 2011
Substituted butter, added a tad more sugar and a big dollop of sour cream to even out the milk to one cup. Yum! UPDATE: Made them with all buttermilk then night before and refrigerated the dough. The taste was great, but I didnt get the perfect "rise" that I did the first time. I think it was an issue of not cutting in the butter enough. The biscuits that had the huge chunks were nice and fluffy/flakey...next time, I will take the time and make them from scratch that morning.

Blueberry Cream Muffins

Reviewed: Jun. 26, 2011
Well, my husband said it was the best blueberry muffin he's ever had! I was force to substitute about 1/4 C of the sour cream with vanilla yogurt because I was low (I halved the recipe so I used about 3/4 C sour cream). I also added 1/2 tsp baking powder in addition to the soda. I topped with a crumb topping and baked at 375 (convection) for about 22 minutes. Wonderful! UPDATE: Made the full recipe with all sour cream and addind extra baking powder and they were even better.
