Molly's Chicken

I made this exactly as written, and it's a keeper. Perfect for a simple weeknight meal. My husband said to put it on the rotation, so it must be good. Next time I will use a lower sodium soy sauce, but even as is, it's good. Thank you for a great meal made with pantry staples!

Broccoli Soup

This really tasty and super easy! The only reason that I gave it 4 stars and not 5 is because after making it, I felt it was missing something. I added 1/8 cup grated parmesan and a sprinkle of cayenne (I halved the recipe so next time when I make the full recipe I will add 1/4 to 1/3 cup parm) and this took it to a 5 star recipe. Thanks! Can't wait for that family to try it. Also, omitted the nutmeg due to personal taste.

Easy Sugar Cookies

I reduce the temperature to 350 because I am baking in a convection oven and 9 minutes is perfect. I add 1/4 t almond extract and sometimes substitute lemon extract for the vanilla. This is a perfect cookie the way it is written, but also to play with.

Butter Frosting

This was perfect. I used about 4 cups of sugar and it was the perfect consistency for piping. I also added 1t cinnamon for chocolate mocha cupcakes with cinnamon buttercream frosting. UPDATE: when I served my cupcakes directly out of the refrigerator, the icing was very dense. In my experience, it's best to pull it out about an hour before serving and allow it to soften a bit.

Ragin' Cajun Pasta

I did take some liberties with his recipe based on what I had. Used chicken thighs, canned tomato, left out the shrimp and subbed sherry for the white wine. It was very good though! Next time I will definitely use the shrimp, but I will leave out the broccoli (kids and I liked it, but hubby didn't.). This would also be tasty over rice or orzo. Thanks for a great recipe!

Raspberry Lemon Muffins

These were really good. I used fresh blueberries, and substituted sour cream for the plain yogurt. Instead of topping with white sugar before baking, I made a glaze from lemon juice, milk vanilla and powdered sugar.

Oatmeal Raisin Cookies I

I haven't even finished baking the batch and I'm already writing a review. These are exactly what I have been looking for! A nice chewy oatmeal cookie. I can't stand a cakey cookie and these are perfect. The only thing I changed was to add 3/4 cup of raisins and 1/2 of walnuts. Otherwise, perfect. For my notes: reduce temperature to 350 when using convection.

Apple Hermits

These are very good. I substituted butterscotch chips for the raisins and didn't make the glaze. I shredded the apples and left out nutmeg and cloves. These seem to work better with a small scoop rather than the large. Edit: changed this from 5 to 4... The flavor is good, but the presentation isn't that great. They spread quite a bit and don't really hold their shape.

I've made this many times and I have found that I like the chocolate chips mixed in the best. Otherwise perfect. 1/2 cup was plenty for us and when I double the recipe, 3/4 c was perfect.

Easy Shepherd's Pie

This was an excellent base recipe. I used bob Evans mashed potatoes, 2 oz cream cheese and a little more cheese. For the gravy, I used a lawrys packet and prepared it in the pan after browning ground beef, onions and garlic. I added a dash of red pepper. Very good

This tasted very good, but the bake time was off. At 35 minutes, mine was still raw in the middle. I sprinkled cinnamon sugar on top before baking to give it a nice crusty top.

Ham Casserole

My whole family loved this. Three small russet potatoes and a 12 oz ham steak were perfect. I almost left out the green pepper, but I'm glad I didn't. I also made 1 1/2 times the sauce so there would be no chance of it turning out dry. For the bread crumb topping, I mixed them with 2T melted butter. Very good!

Homesteader Cornbread

It's was excellent cornbread! So moist and it didn't fall apart or crumble like other recipes. My new favorite! It's very important to follow the submitters instructions in the reviews to mix it for five minutes and don't forget to let the cornmeal soak... Excellent!!!

Picnic Marinated Summer Slaw

I used a 16oz bag of slaw mix (with carrots and red cabbage) and a bunch of green onions because that was all I had on hand. This was still wonderful! Can't wait to try it with the green peppers and cucumber, but I will leave out the tomato to suit our tastes.
