Caribbean Banana Muffins

These were really delicious, and perfect because I have a lot of dried pineapple chunks to use up. The coconut, banana and pineapple flavors blended perfectly. They were great breakfast muffins and they froze very well also. :) I will be making them again.

Original Irish Cream

This was really tasty. Not as strong as some other members suggested, and honestly it doesn't taste exactly like Bailey's - it's more chocolatey. The only thing I didn't add was the instant coffee because my hubby is not a coffee lover. My husband and I downed the entire pitcher in one night - I know - I have calorie remorse, lol.

Iced Pumpkin Cookies

These were wonderful. I needed to use up half a large can of pumpkin and these were perfect! I made them exactly like the recipe directs, and my husband and I both liked them a lot. I found it worked a lot better to top the cookies with icing to dip each cookie in the bowl of icing and then let it drip back into the bowl - made less of a mess than drizzling it on all the cookies. I will definitely be making these again in the future.

Country Green Beans

This was wonderful, and I hate when people rate the recipe when they changed things, but *sigh*, I changed things slightly. I saved the cooked bacon until the green beans were done and then crumbled on before serving (so the bacon was still crispy), and I must have used about 3/4 a cup of chopped onion, I used 1 and a half cloves of garlic, and I used a full cup of chicken broth - half a cup to start and then the other half halfway through cooking because the pot looked a little low on fluid. They turned out great! Definitely a keeper.

Quick and Easy Tuna Casserole

Better than expected! It wasn't the greatest meal I've ever had, but it was extremely easy to prepare and really easy on my wallet. My only additions were two cloves of garlic and a few strips of crumbled bacon. After I spread it in a casserole dish I sprinkled seasoned bread crumbs and some grated parmesan cheese on top. I also did pop it in the oven for about 30 minutes at 350 degrees. Overall it turned out really good. :)

Sweet Onion Pie

We liked this a lot. Very buttery and flavorful. I think it would be even better with some additional veggies added to it. Maybe some sauteed mushrooms? Or some tomatoes? I will try making it again with some additions.

Apple Dumpling Cake

Made this last night. The topping is amazing! It tastes like snickerdoodle cookies. I tossed the apple slices with brown sugar, cinnamon and vanilla extract before putting them in the dish. Next time I think I'll add a little lemon juice too. Great recipe! :)

Mushroom Meatloaf

Really good! I used plain breadcrumbs and added some seasoning - basil and a bit of oregano. I also added two cloves of garlic and sauteed them in some butter with the onion and mushrooms before adding them to the meat mixture. I also used a glaze of ketchup, mustard and brown sugar that turned out great. I will definitely be making this again.

Yellow Squash

This was good, but WAY too hot. I don't know if I just got a really hot jalapeno or what, but it was spicy! Also I feel that the recipe should warn people to wear gloves when chopping fresh jalapeno. I've never done it before and my hands (and face unfortunately) were burning all night, even though I washed my hands right after chopping. Again, really hot jalapeno. I will definitely be making this again, but maybe with pickled jalapeno instead or half a jalapeno.

Sour Cream Chicken Enchiladas

This was a pretty good recipe. I felt it called for a little too much canned jalapeno. Made it pretty hot. I used green onions instead of regular onion. Overall I'd say it's a keeper.
