Zucchini-Chocolate Chip Muffins

I doubled this recipe and worked perfectly. Also, used 1/2 vegetable oil and 1/2 apple sauce because I ran out of oil. Worked great. Thanks for the wonderful zucchini muffin recipe. The kids (and adults) loved them!

Slow Cooker Chicken and Dumplings

This is probably the best slow cooker chicken dish I've ever made. I made a few additions just to please my family and it turned out great. I rubbed the chicken with my own poultry seasoning, used chicken broth instead of water, put in some celery and carrots, and since I had white mushrooms in the house, added those. I too, felt that the dumplings needed at least an hour to cook, but was running low on time about 45 minutes in, so threw the pot in the oven for about 10 minutes on 350 degrees to finish them up. Thanks to everyone for the tips and great recipe. It's a keeper.

Beef Bourguignon III

I've made this recipe a few times and each time it gets better. I omit the small onions as my husband detests them, but pretty much keep everything else the same. Also, I use a top cut sirloin and cut it up which is often more tender than stew beef from the market.

Fast and Easy Tofu Lo-Mein

Easy to make and the whole family enjoys. If you don't want the fat and sodium associated with ramen noodles, try using angel hair pasta and five spice powder to taste.

Creamy Rice Pudding

Wow! This was wonderful. I followed the recipe, with the exception of using 1/4 cup sugar, 1/2 tablespoon of butter and no raisins. I added the sugar after the milk and rice was already warm. Great recipe. Thanks!

Stuffed Pork Chops III

Great recipe! It was a bit salty... but that was my fault. Next time I'm going to use a low/no sodium broth or reduce the salt and use plain breadcrumbs instead of seasoned. Also, I used fresh parsley and it looked so savory with the onions. Thank you for this keeper.
