Blooming Onion and Dipping Sauce
I was looking for a simple recipe for the dipping sauce to use on crab cakes or fried fish and thought of the dipping sauce that is served with the Bloomin Onion. I have not attempted the onion yet but this sauce is great. I did make a few slight changes. I reduced the salt to 1/8t, (1/4 t. was way too salty!)eliminated the black pepper since the cayenne provides plenty of heat, and added 1/2 t. lemon juice. I also used ground oregano as I didn't recall seeing any flakes in the sauce at the restaurant.

Mushroom Rice
Great recipe. I made this last night as a side dish for pork tenderloin. I used 8 Baby Bella mushrooms and brown rice rather than white, which gave it a nice "meaty" texture. Brown rice requires more liquid and a little longer cooking time than white rice. I used about 3 1/4 c. chicken broth to the 1 c. rice and cooked for a total of about 30-35 minutes. I also increased the green onion to about 2 1/2. I think measured seasonings are important with rice to avoid blandness. I used 1/2 t. salt and 1/4 t. pepper. Rice cooks better if you cook it in a no-stick sauce pan with a glass lid and do not stir or remove the lid during the entire cooking time to keep the heat and steam in. A little of the rice on the bottom of my pan stuck and caramelized but I scraped it up and stirred this in at the end which added color and some crunchy little flavorful bits. Yum! I could see stirring in some toasted, chopped pecans as a nice addition as well. I also added in about 2 T butter at the end to add some creaminess. It was delicious!
