Absolutely Ultimate Potato Soup

Delish! Loved it! Tarragon and cilantro make it so unique! I made the following healthy changes...turkey bacon. Canola oil to cook onions in. Instead of a butter {fat} based rue I poured the half n half into the stock pot then after cooking stirred in instant mashed potato until it was as thick as I wanted it to be.

Creamy Cucumber Dressing

I can't believe how many negative comments there are. It's a lovely light summer dressing you could use in many ways. I poured it over sliced cucumbers, tomatoes and onion for a cucumber salad. Very nice. I did thicken with 50/50 yogurt/sour cream. I calculated the calories and it's only 54 per tablespoon using fat free yogurt and fat free sour cream. Lite flavor and lite in calories.

Amish Macaroni Salad

This makes a lot if you're like us and it's just the two of you you'll want to half the recipe. It made more sauce than I needed so I boiled up & diced a potato - makes a decent potato salad as well. Also I could see this sauce on a vegetable platter for dipping. I am glad I read the reviews. Like most here I reduced the sugar. {You can always add more but you can't take it out} I used 1/4 cup sugar and still a bit sweet for me. I'll do 1/8 next time and it'll be perfect. I also shredded a carrot for additional color, I didn't have yellow mustard so I used Spicy Brown mustard. I used Malt Vinegar not white, and I ran out of Miracle Whip so it was 1 cup MW and 1 cup mayonnaise. And like everyone I added an extra egg. I love this recipe because it's flexible. Next time I might throw in some thawed frozen peas, maybe diced ham or some tuna. Smoked Paprika maybe? This recipee accommodates a lot of variety, be creative or just clean out the fidge of leftovers.

Italian Dressing Mix

Very Nice! Just like everyone else I eliminated the salt. I also used garlic powder not garlic salt {I don't care for salty taste} I did use the celery salt and I added 1 tablespoon Parmesan. Best made the day before so it all blends together. First time I used red wine vinegar, good. Next time I used balsamic - better :)

Make Ahead Breakfast Casserole

Recently my in-laws descended on us and I gave this a try. What a HUGE success. It was healthy, delicious, easy to make and the leftovers microwaved nicely so there was no effort feeding my mom-in-law the next couple of days. And I'm looking like a star "for going to so much trouble".

Absolutely delicious of course. Sometimes I make this substituting the pineapple for peaches. Peach Upside Down cake is also delish using this recipe. Next I'll try ... apple upside down cake?

Dressing for Potato Salad

Classic Dinner Rolls

Double Duty - I loved the dinner rolls, but I also use this recipe to make hamburger buns. Divide dough into 8 pieces, shape into flattened balls and lay on a cookie sheet. Bake - cool - slice. Better than store bought and the heartier texture holds up to juicy hamburgers.

Cinnamon Raisin Bread I

CAUTION: This bread is highly addictive! There ought to be a 12 ste[ program for it, it's that good. When visiting , my mother-in-law won't let me in her house unless I have a loaf of this with me. Seriously, it's delicious, easy to make, and makes enough to share and still have some for yourself.

Mall Pretzels

My first time making a soft pretzel. WHAT A HIT! They were all gone 15 minutes after I pulled them from the oven and my neighbors were asking when I'll make them again! For variety, I use koser salt on some, Garlic salt on some, Ranch Salt on one, and cinnamon/sugar on some. {And 1 plain one for me :)} Oh, my neighbor just called and asked for the recipe.
