Mexican Rice

Reviewed: Aug. 10, 2004
Excellent and easy recipe - I didn't alter a thing! My husband enjoyed it so much that he brought extras to work, for the guys to try it out. It is great to find something so easy with a 7-month old keeping me so busy. It was so good that I will even try it out on my most difficult critic, my 12 year-old!

Fried Green Tomatoes

Reviewed: Sep. 24, 2004
Wonderful recipe... First time for both my husband and I, trying fried green tomatoes and we BOTH loved it. I also substituted bread crumbs for the soda crackers, and added garlic and onion powder to the dry ingredients. I did however need 3 eggs, and needed to clean my frying pan between batches, as the butter and coating blackened, even on medium heat. (It took me 4 batches to fry them all, and I cleaned between 2 and 3).

Turkey and Stuffing Casserole

Reviewed: Nov. 5, 2007
Very tasty! Not the prettiest when served, but yummy nonetheless. I used ground turkey and stove top (2 boxes) stuffing, and added onions to the turkey while I browned it. Both my husband and father in law loved it - Hubby said "it's a keeper"

Sweet and Sour Meatballs II

Reviewed: Sep. 13, 2004
Terrific recipe - easy, fast prep and cook time, and best of all very few dishes to clean afterwards. I did however heed the advice offerred, halved the vinnegar, and used white instead of cider vinnegar. My family liked it a lot, but if you have anyone that is anti-onion, this is not for you; my 12-year-old commented on all of the onion inside the meatballs. However, everyone else loved it.

My Mom's Sausage & Rice Casserole

Reviewed: Sep. 14, 2004
Average, at best. My 12 year old said it looked horrible. I found the 90 minute cook time to be excessive - we like our rice and pasta to be al dente, and this was one step above mush. If making it as a main dish, definitely double it - at our house, it served 3, and these were not generous portions. Also, a word of warning: choose the LEANEST POSSIBLE sausage. Even though I sauteed and drained it first, it was a very greasy dish. Overall, it was edible, but not fabulous.
