Balsamic Roasted Pork Loin

Thank you for a good, simple, flexible recipe! I didn't have enough balsamic vinegar so I used balsamic vinegar and sherry vinegar. I also used some garlic flavored olive oil. My pork loin was much smaller so it didn't require a very long cooking time. Make sure you consider this when planning...you don't want to overcook this yummy pork loin! I served it with roasted butternut squash.

Chicken, Spinach, and Potato Soup

Black Bean, Corn and Turkey Chili

This one is a definite keeper! The changes that I made were: using canned hominy (rinsed) instead of corn, using seasoned canned black beans, using a Fire-Roasted salsa that we buy at Costco, and adding a bit of Corona beer. I love this recipe because I was able to make it without a trip to the store.

Cottage Cheese Chicken Enchiladas

I love this recipe. There are only two of us so I make it in two casserole dishes and freeze one for use another time. The frozen one turns out more like an enchilada casserole but is still delicious!

Angel Hair Pasta with Shrimp and Basil

I was excited about this recipe due to the reviews. I like the way the recipe is put together, we didn't find it to be very flavorful. I followed the recipe although I used 2 14.5 ounce cans of "Italian Recipe" stewed tomatoes. I will try again and spice it up a bit.

Banana-Oatmeal Bread

This is a hearty banana bread. I made the recipe with one substitution: I used half white flour and half whole wheat flour. It made it a bit drier, I think. It was not geat at room temperature but I presliced it and kept the slices wrapped in the refrigerator. A few seconds in the microwave and I had a great warm mid-morning snack.

Baked Pork Chops I

I was excited about this recipe because of the reviews. The sauce was wonderful but my chops did not come out tender. I used the thick chops...I will try again with thinner chops. (I may try this recipe with chicken breasts.)

Cowboy Mashed Potatoes

I have made this twice now and it's a keeper. I don't add the jalapeno pepper and only use Yukon Gold potatoes. Hint: If you have a hand blender, it only takes a few seconds to mash it up right in the pot!
