Pumpkin Cookies I

This is really a wonderful fall recipe! I changed it a little bit - instead of butterscotch, I used caramel/milk chocolate swirls. They look very festive (orange and black for Halloween) and taste good with the pumpkin. Also, because I accidently ran out of pumpkin puree, I used canned pumpkin pie mix as well, which turned out nicely - although maybe not quite as flavorful as I would have thought. Still, if you add a touch more cinnamon, and a dash of ginger and nutmeg, this cookie is a fall must! My brother, who NEVER eats sweets, devoured five of these at one go.

Glazed English Toffee Cake

Very, very good chocolate cake recipe, but a little less dense than I expected. When I made the glaze, it was just barely enough to cover the top - next time I would double the amount and add a little bit on the layer w/ the whipped topping, along w/ 1/3 cup chocolate chips.

Hummus Pizza

WOW!!!!!! I would rate this 500 stars.. it is SO GOOD! At first, I was reluctant to try it b/c it seemed like a weird combination and rather boring, but that is NOT TRUE. TRY IT. The hummus sort of melts a bit into the dough and makes it soft and moist and delicious, but still (sort of) pizza-like. I added onion and got rid of broccoli (personal preference), but I get the feeling you can add pretty much whatever you want on this - alfalfa sprouts, anything. Again, WOW - a keeper.

Most Excellent Sandwich

A very nice sandwich. I used a lot less alfalfa sprouts and cream cheese than called for - maybe 1/2 less? Anyway,it makes for a very decent, interesting lunch.

Spring Delight Salad

A wonderful salad. I didn't do the pepper (cuz I was really short on time), and substituted for a few ingredients (like mushrooms), but that's the beauty of this colorful dish - you can add different things. I also put in a bit of seed and dried fruit mix. A keeper!

African Peanut Soup

Delicious! My brother and I loved this wonderfully creamy, interesting soup. It really is good with bread and sour cream (or yogurt for the health-conscious). The crunchy pb can be substituted for a low-fat version, if you want (that's what I did), but the crunch is probably for texture. I definately recommend this soup - easy, scrumptious, and different!

Beezie's Black Bean Soup

Very nice main-dish soup - however, as mentioned above, the cooking time has to be REALLY extended to cook the rice. In fact, if you dislike crunchy rice, I' reccomend cooking the rice a bit first. Also, two T chili powder is WAY too much. I'd just add a dash and supplement with basil. I served mine with a dollop of yogurt, chedder cheese, and tortilla chips. On the whole, though, a very filling and tasy dish.
