Chicken Broth in a Slow Cooker

Reviewed: Jan. 4, 2014
Very good. It was cheaper to buy a whole chicken than to buy a kilo of pieces so I roasted a chicken then stripped most of the meat and used the carcass for this recipe. I then used the broth to make a recipe from this site called Sopa de ajo (Mexican garlic soup), it was delicious.

Sopa de Ajo Mexicana (Mexican Garlic Soup)

Reviewed: Jan. 4, 2014
Yum! I served this without the bread to cut back on carbs. I also didn't use a chile pepper as I can't really handle spicy food, instead I added just a dash of tabasco sauce. I also added chicken meat to make it more substantial but it didn't really add anything so I won't use that next time. I used homemade chicken broth because it constitutes the main volume of this recipe so wouldn't use a storebought stock. I ended up having two servings! very nice as a starter or just a light meal or lunch. I'll definitely make it again :)

Baked Kale Chips

Reviewed: Jan. 2, 2014
It tasted like broccoli. I managed to get them to the right level of crispness but I didn't really like the flavour but then again I hadn't tried kale at all before so I didn't know what to expect. The texture meant it was more enjoyable than broccoli - which I hate - but I doubt I'll make it again.

Chef John's Caramel Chicken

Reviewed: Nov. 29, 2013
Fantastic! A treat meal for sure based on the sugar and salt included but really delicious so it's worth it! I skipped the water based on other suggestions and served it with sushi rice. I don't think the name caramel chicken gives a real indication of what this recipe makes, I liken it to the teriyaki chicken available at bento bowl shops.

Best Spanish Rice

Reviewed: Nov. 29, 2013
This is great, so easy! I make sure to use a salsa with less salt as this can turn out quite salty. I also find that if you leave it to cook it will stick to the bottom of the pan, you really need to continue stirring and scraping the bottom of the pot the whole way through.

Lemony Cucumbers

Reviewed: Nov. 29, 2013
These were good. I might have to adjust some of the ingredients next time for my taste, I'll skip the celery seed and lessen the sugar. Quick way to add greens to a dish, I served with sushi rice and Chef John's caramel chicken.

Bacon Wrapped Hamburgers

Reviewed: Nov. 29, 2013
These are yummy. I've found it difficult to find a homemade beef patty recipe that actually tastes good and this one does. I give it 4 stars as I find the process of cooking with bacon wrapped around them too difficult, I just cook the bacon separately and serve it on top.

French Dip Sandwiches

Reviewed: Nov. 13, 2013
Based on the other reviews I thought this was going to be quite salty. I made it as stated, and actually found it needed a little more salt. Not entirely sure it's my style but it was exactly what I expected and very easy to make. Thanks.

Grilled Tamarind and Orange Glazed Chicken

Reviewed: Nov. 4, 2013
Yum! This was very tasty and also worth noting it looks great. Definitely worth serving to guests. I had bought Tamarind puree to use in a Pad Thai recipe and wanted another recipe to utilise it more often. I wasn't sure what herbs de provence was, I guess we don't have that round here so I looked up what herbs are normally in that mix and saw it included basil and thyme which I did have. I used a tablespoon each and found the thyme a bit strong so I'll adjust the herbs next time. We served with salad but might try on kebabs also. A really great recipe I'm pleased to have!

Grilled Chicken Spiedies

Reviewed: Oct. 21, 2013
Yum! I really liked this recipe, it had a great tangy flavour a hint of mint, but not too much. Mine was a little dry but I may have overcooked it and even though I know it's traditional I found serving it in a bun with nothing else a little boring so next time I might add some salad in with it.

Popularity Cookies

Reviewed: Oct. 13, 2013
Wow. So okay, the first time I made these I didn't read the recipe properly and rather than boiling the butter and sugar I just warmed it enough to melt the butter. This lead them to being less like a hard toffee and more like a sticky caramel. We really enjoyed them but I thought it best to try again and do it as described in the recipe. The second time I boiled the mixture and I would have appreciated a short description of what it's supposed to look like at this stage just to reassure me I'm doing it right. Anyway it all went as planned and the cookies were harder this time and now I'm not so sure which way I liked them better! Regardless I think this is a great, easy recipe and the only change I will make is to just use one type of chocolate chip as once melted and spread around they all mixed together anyway. I've taken to calling them Toffee Crackers as it gives a little idea about what they are like. Thanks for the recipe!!

3BC (Best Baked Bean Casserole)

Reviewed: Aug. 21, 2013
This had a nice flavour but felt a little dry to eat. Typical of baked beans though. I used less sugar as I didn't like the idea of it being very sweet. It was rich also, I would only have a small serve as a side dish. Thanks for the recipe.

Barbeque Chicken

Reviewed: Aug. 21, 2013
This was very nice. The meat was a little dry but that is my fault as I used breasts instead of thighs. Next time I might try simmering the sauce after it has cooked to serve over the meat to add flavour as some have suggested. It did take a while to cook for a simple recipe but it gave me time to do the dishes. Thanks for the recipe.

Oven Roasted Parmesan Potatoes

Reviewed: Aug. 21, 2013
These were very tasty! I found the cheese didn't stick that well to the potatoes but I was able to scrape any extra off the pan and place it back on. I sliced my potatoes into threes lengthways so there was a middle slice with two cut sides. I had quite small potatoes, if they were bigger I would have sliced them into more pieces. They were a nice change from plain roasted potatoes and fairly easy to prepare to have alongside something else like barbeque chicken as we had this time. Next time I might try parboiling them as someone else suggested. Thanks for a great recipe.

Ginger Bars

Reviewed: Aug. 21, 2013
These were great. I love the idea of a something you can eat like a brownie but has a change from all the chocolate recipes out there. I think I undercooked mine a little bit but it was still great. When it came time to 'pour' the mix into the pan I thought perhaps I had made a mistake along the line as it was a thick batter that needed to be spooned into the pan and spread out. I think the wording was just a little off. I also had to use two cups of all purpose flour as I didn't have any whole wheat flour available. Still great but I might try to get some whole wheat flour for next time to see the difference. I also used golden syrup in place of molasses as that is what I had in the pantry. It was quick and easy to prepare before starting dinner. Thanks for a great recipe!

Swedish Sticky Chocolate Cake (Kladdkaka)

Reviewed: Jul. 22, 2013
I give this recipe 4 stars because although the taste and texture were lovely, I was expecting something a bit different based on the name and this is really just a thin chewy brownie. I didn't have a pie plate so I made this in a small metal pan and it did stick ALOT even though it was greased. Very tasty and quick to throw together. I make this before dinner then have dinner while it is cooling.

Slow Cooker Chicken Mole

Reviewed: Jul. 8, 2013
I was really disappointed with this recipe. I've had mole at a restaurant before and enjoyed it but this was basically inedible. I followed the recipe except I skipped the chile as I can't handle the heat. At first it tasted like it was completely flavourless but eventually it became distasteful and I left half my meal on the plate. It was however a good texture and consistency, I used chicken stirfry meat and it broke up and mixed well with the sauce.
