Blueberry Zucchini Bread

You can't go wrong with this one. I made it into 24 muffins with crumb topping for a brunch at work. They were fighting over them. Great as is. Personal changes crumb topping (equal parts ww flour, brown sugar, old-fashioned oatmeal and butter with a dash of cinnamon), switched out the flour (1 cup unbleached and 2 cups whole wheat), added 1/2 a cup of zuccchini and swithced out the oil with olive oil.

Easy Cream Cheese Danish

Great recipe. Always get requests to make it. I like to slice the rolls and make minis instead of slicing. Slice, flatten, dollop of cream cheese (I add lemon zest) mixture, add a cherry or two, then make the icing a little thin w/ lemon juice and lemon zest and ice by squeezing out of a plastic snack bag with a very small hole cut into one corner.

Baked Potato Soup

Excellent, Quick and Easy - Most ingredients will already been in your house. Only made smalll personal changes - Added 1 T. flour, used 1/2 the basil and used undiluted canned milk instead of 1/2 and 1/2 as I keep it on the shelf and didn't want to run out. Everyone loved it! No leftovers!

Aunt Carol's Spinach and Fish Bake

Loved Aunt Carols review version - "Cheddar Fish Florentine. It calls for 1 C shredded sharp cheddar, 2 Tbls dry bread crumbs, 1/4 tsp dried and crushed tarragon leaves, 1 10oz pkg chopped spinach thawed and well drained, 1/2 lb fish fillets. Combine cheese, crumbs and tarragon, reserve 1/4 C for topping. Mix with spinach. Spread this into baking dish, top with fish, sprinkle on remaining cheese mixture. Bake 450 15 to 20 minutes. Two servings. I love all the variations. I myself added an egg to make the spinach more like a souffle. Of course, I rate it 5 stars! Enjoy! "

Baked Fish and Rice

Great Recipe! If you like your broccoli less cooked, use fresh and do not pre-cook. Comes out perfect every time! I use this recipe when cooking to stock my elderly in-laws freezer with meals. Cut fish into pieces. Divide between two 1/2 pans, , freeze with baking directions (including to stir before baking to get the rice off the bottom or from being all on one side) to complete. (I use the frozen broccoli for elderly and fresh broccoli for home.) Add your favoirte spices if you like more spice flavor.

Mom's Italian Beef Barley Soup

This recipe is a keeper. Great flavor. Freezes beautifully. Just than and reheat in microwave (small portions) or slow cooker (large portions). Use this recipe for freezer meals for elderly parents. Added a splash of leftover wine, chopped celery and carrots, Italitan seasoning and gralic poweder.

Slow Cooker Lentils and Sausage

This recipe is THE BEST per my husband's rating scale - says he could eat this 3 times a day. We use whatever variety of sausage we're in the mood for - each adds its own flavor. We also add a little garlic or garlic powder. Excellent and Easy!!

Amazing Pork Tenderloin in the Slow Cooker

Used pork loin roast - much less expensive - wonderfully flavored and tender. I skip the searing of the roast, simply place all in the crockpot and go to work. Superior flavored gravy. Also, this freezes well. Great to make, cool and slice, put into containers with gravy for meals for shut-ins or freezer meals elderly parents that refuse Meals-On-Wheels. Reheats well in microwave after thawing.

Fondue Bread

The BEST! Rarely any left over, but if there is it reheats so easily. Wonderful with tossed or fruit salad or served as appetizer. I like to use 2 different cheeses or use up different pieces of whatever cheese is in the refrigerator. Always great.

Hot Jezebel

Made this to take camping at Bristol NASCAR race. Due to camping mixed everything together as a "dip" instead of layering - Flavors blended - super recipe. Stored in a shaped bowl with lid, sprayed with PAM for easy removal. When ready to serve used checkered flag paper plate with lettuce leaves.
