Easy Ham and Noodles

Great recipe - lots of room for flexibility. Like others I have changed the soup flavor and substituted the vegetable, (we like broccoli). The french fried onions (that I previously only used on the infamous Thanksgiving green bean casserole) were a really tasty addition. Yummy! Good comfort food.

Southwestern Bake

Pretty tasty casserole. I substituted 1/2 the cheddar cheese with jalapeno cheese and my family thought it was plenty spicy.

Blueberry Muffins I

I love the simplicity and ease of this recipe. The muffins aren't overwhelmingly sweet, but the texture is outstanding (and SO moist!) I prepared the recipe just as written except that I doubled the blueberries to 1 cup (1/2 seemed like such a small amount) and I used frozen berries. I also had success foregoing the paperliners and just spraying the pan with cooking spray - they slide right out of the pan.

Luscious Buttercream Frosting

Great frosting! Very easy to make - we followed the directions exactly and added some festive food coloring - perfect! Easy to work with and spread nicely (on chocolate cupcakes), too.

Fresh Broccoli Salad

GREAT salad! It tastes awesome. I made it for a potluck gathering and it got rave reviews. The only downside is that it does not keep overnight - the tiny bit of leftover that I had the next day was soggy....

Chicken Enchiladas V

YUMMY! These were a hit in our house, and the one that was leftover, heated up great for lunch the next day. The perfect amount of seasoning/hot spices. I may have overstuffed them a bit, though, because I only ended up using 6 tortillas.

Spinach Stuffed Chicken Breasts

Lower Fat Banana Bread II

This is probably the best banana bread I have ever made (and I am forever trying new recipes!) I was not specifically looking for a lower fat version - just one that didn't call for butter/margarine because I didn't have any on hand that particular day. I do not think this recipe is lacking in taste at all; no one in my house (of picky eaters) could tell it was low-fat. I love that it is so yummy and what a bonus that it is also somewhat healthy! The only changes I make are: one additional banana, 1% milk and 1 teaspoon of vanilla, (I thought a tablespoon would be unnecessary). This bread is great the first day, but I agree with the previous review in that it tastes even better after being wrapped up overnight.

Shannon's Wicked Brownies

I probably should have figured out from the ingredients (namely that there are 4 eggs and more sugar than flour) that these would be on the gooey side. These are not really a brownie in the traditional cake/bar sense. They seemed a little loose and gritty. They are SUPER sweet - I followed the recipe exactly except that as previously suggested, I only used half the chips the recipe called for. I was a little disappointed that the toffee pieces could hardly be detected once cooked.

Cheesecake Brownies

I followed the recipe as written and these turned out really well. Nothing too fancy, but a nice way to jazz up a plain box brownie mix. I prepared the brownies per the "cakelike" directions and they were nice and fluffy. I also used a glass baking dish (if that matters). No problems with lumpy cream cheese or runny batter over here.

AWESOME muffins! Very tasty and super moist. I have made the recipe exactly as written, as well as with some of the suggestions (like cinnamon & vanilla) - either way theses muffins turn out great!

Lemon Lush Pie

This is so very tasty! I followed some of the other suggestions and reduced the milk to 3/4 cup and increased the lemon juice to 1/2 cup. I also knew my family would not care for the lemon zest in the pie filling, so I added it to the crust instead. (I made a graham cracker crust). It was quite lemony, but got even more so after being refrigerated overnight. It definitely satisfied my craving for a lemon meringue-type pie without all the extra work.

Garlic Lime Chicken

If I could give more than 5 stars, I would! This recipe is outstanding! It is quite simple and yet the taste is incredible. My family prefers boneless skinless chicken breasts and I don't typically have "seasoned pepper" on hand, so I just use regular ground black pepper. Thanks for an AWESOME way to grill chicken!

Banana Bars

Very tasty and super moist. I followed the recommendations of others: used butter (1/4 cup) in place of the shortening, used more bananas (3 small) and added an egg and a teaspoon of cinnamon. We did not even bother with the icing - they were a huge hit without it. Thanks for another great way to use up my VERY ripe bananas!

Banana Chip Muffins I

These are really great muffins - moist and not at all crumbly. They were a hit for snack at preschool! I followed the previous recommendations regarding the milk and increased it to 1/2 cup. The amount of banana worked out fine for our tastes, but I can see if you really want a lot of strong banana flavoring that you might want to add more bananas. Also - I'm not sure if it was my oven, but they were done/brown in less than 20 minutes.

Seven-Up™ Sheet Cake

This cake is super easy to make and comes out very moist and YUMMY! It was a big hit at a luau-themed party we recently attended. As for the topping: 15 minutes on low will barely even get the butter melted. I raised the heat to medium and was vigilant about stirring - it still took about another 20 minutes to be completely thickened.

Barb's Pumpkin Chocolate Chip Muffins

These muffins were tasty; although they did not have as much pumpkin flavor as I would have preferred. They were quite moist with an almost sponge-like texture. They filled the (paper-lined) cups and rose up nicely while baking, but weren't particularly "eye catching" if you are looking to impress (visually).

Cinnamon Pancakes in a Jar

I did not make this to give as a gift. I just mixed all the dry ingredients together and placed in a Tupperware container to have on hand for busy mornings. The pancakes were pretty good and had a nice cinnamon taste. They were a bit on the dense side, though; we prefer a lighter, fluffier style pancake.
