Blueberry-Lemon Crumb Bars

Pretty tasty! I was concerned about the "cracker crust" some mentioned so I made this in a 7x11 glass pan and liked the way it turned out. I'm not a fan of nutmeg, though, so I think the next time I make this I'll either leave it out or perhaps substitute with cinnamon. Also - I personally thought they tasted better the next day. They were more of a crumb-cake dessert the first day, but there were a handful leftover and I stored them covered in tupperware overnight and they were moist and had a nicer consistency in my opinion.

My Special Shrimp Scampi Florentine

My family loves this recipe and I make it often. I like to serve it over linguine noodles. The only change I make is to leave out the olive oil; my pesto is oily and the 1/3 cup butter seems plenty. Also - a couple times I was in a pinch for tomatoes and substituted a can of drained petite-diced tomatoes. Tasted equally as wonderful! If you happen to have any leftovers, it reheats very well the next day, too! Yummy!!

Biscotti

Yikes - no sticky dough complaints over here! Very tasty, but crumbly. I used a combo of all-purpose and wheat flour (although - just 3/4 cup of whole wheat) and also added 1 cup of almonds. I'm guessing these two changes may have accounted for the dry and crumbly dough - a challenge to work with for sure. Next time, I will make exactly as written and see if they come out differently.

Lemon Cream Pasta with Chicken

Prepared it exactly as written and this dish was amazing! I've got a lot of picky people over here, but EVERYONE ate it!! Only substitution was that I used mafalda noodles (ribbon shaped) instead of rotelle.

Cherry Cobbler I

This is a fantastic cobbler recipe. I followed it exactly as written - except where it calls for 1 cup of sugar to be blended with the water I only used 1/2 cup. The biscuit topping had a nice slightly crispy texture and there was the perfect amount of liquid on the bottom with the cherries. Will definitely be making this again!

Simple Sassy Salmon

I followed the recipe exactly as written. I had all the ingredients on hand, it was easy, and tasted pretty good. I have to mention, though, that it was not a typical marinade (lacked liquid) so the glaze pretty much sat on top of the salmon while it chilled. It was a good flavor, but it didn't permeate the fish as I had anticipated.

Chocolate Chip Banana Muffins

This is an excellent recipe. We make it all the time and follow exactly as written - except we cut down the sugar to 1/2 cup if we are adding the chocolate chips (and I prefer the mini chips so they are more evenly dispersed throughout the muffin. We have made them without the chips on several occasions - and used the listed 3/4 cup of sugar - and they are as equally well-received.

Sloppy Joe Sandwiches

Awesome recipe! I used 2lbs of meat and adjusted all the other ingredients accordingly. I also liked the suggestion of white vinegar, so I added 1 T of that - it was fantastic. Sweet with just a bit of a kick. A keeper for sure!

Royal Icing I

AACCKK! Not sure what we did wrong but this came out SUPER runny and was incredibly hard to work with. We were hoping it would be a thicker toothpaste-type of consistency to use in assembling our gingerbread houses, but it was so thin and runny. What a mess!

Slow Cooker Swiss Steak

We've never had swiss steak before, so I'm not sure if this is how it typically tastes - but we did not care for it at all. The recipe was simple enough and the meat did come out very tender, but the flavor just didn't seem right. It seemed like an odd combination of ingredients as I was preparing it, but I held out hope that somehow they would all come together for a nice end result. I was too optimistic.

Groovie Smoothie

I couldn't make it exactly as written because I only had fresh fruit (nothing frozen) and a 6-oz container of strawberry Greek yogurt. I added a few ice cubes and 2 T of honey, though, and it came out pretty good. Next time I will either use more ice or try to have some kind of frozen fruit to throw in because I would like it to be colder.

Pear Blueberry Crisps

I had two large very ripe pears on my counter and blueberries in the freezer, so this recipe was the perfect fit! I made it exactly as written except that I doubled everything and it fed my family of four. I made it in a glass 8x8 pan and it turned out great. Thanks!

Baked Pork Chops I

I made this exactly as written - except that I didn't make the sauce. I also found out that 2 cups of bread crumbs is a little much and my dish cooked in about 30 minutes instead of an hour. Very tasty! The whole family - even the little kiddos - gobbled them up.

Sweet Pumpkin Seeds

I've always done roasted seeds with salt and decided to try a sweet version this year ... this recipe was pretty good, but not really what I expected. They were very well coated and crunchy - almost like a caramel corn, and if you ate them with your eyes shut, you'd be hard-pressed to know there was a pumpkin seed underneath. I think they would have been fine without the last one or two coatings. I did not have parchment paper and just used a lightly greased cookie sheet and it seemed to work out okay.

Quick Turkey Casserole

Easy recipe because I had all the ingredients on hand, but it didn't go over well with the family. It was okay - the rice and turkey part was pretty typical; as another review said, the cornflake & onion topping make the dish. However, I thought the sugary onions and cream cheese just ended up giving an odd flavor combo to the turkey and rice ... the sweetness seemed a little out of place.
