This is a great base recipe. I tweak it a little each time depending on the season. Add white beans sometimes and rice or pasta other times. I always use V8 instead of water and add hot pepper flakes. Thanks for a great start!

Microwave Oven Peanut Brittle

I make more than a dozen batches of this every year during the holidays. We've moved and have a different microwave this time, but one batch was all it took to tweak the times so it turned out right. This is a fast, easy recipe and a HUGE hit a cookie exchange parties!

Sean's Falafel and Cucumber Sauce

This is a great recipe! I baked it this time as others suggested and it is just as good and not so messy or greasy. They were room temperature by the time we got around to eating them on New Year's Eve, but every last one of a double batch was gone in short time. Thanks, Sean, for a falafel that tastes almost exactly like the one at my favorite farmer's market stand!

White Cheese Chicken Lasagna

Made this for New Year's Eve. Fantastic recipe! So excited to find a chicken lasagna that doesn't call for "cream of whatever". Used fresh spinach instead of frozen (bad childhood memories). Also, I had extra rotisserie chicken meat in the freezer, so I used that. Otherwise followed exactly. I didn't find it bland at all, and I'm a salt/pepper-aholic. Be sure to use plain chicken stock instead of low sodium and a good aged parm and blandness won't be a problem. TRY THIS RECIPE! Great for special events when calories aren't a big issue!

Mozzarella Meat Whirl

This is the best meatloaf I've ever made. I hardly ever waste time making meatloaf, because our meatloaf has to have the right texture or we won't eat it. This one is perfect. It is very stout and not at all mushy. Maybe due to the lack of milk in the recipe? I did add garlic powder and chopped onion as recommended by other reviewers. Thanks for a terrific recipe!

Banana Muffins I

I love this recipe, and so does everyone I make it for! The muffins are fast, easy, and very tasty. They also freeze very well and are great with a little low-fat cream cheese spread on them. The only thing I do different is divide the batter between 9 muffin cups instead of 12 to make them bigger. It just takes a minute more of cooking time. Thanks for a great recipe!
