Breaded Parmesan Chicken

I've made this a lot and it has turned out pretty good every time! The coating doesnt stick very well to the bottom and is chunky overall, but still tastes good. I lightened up on the curry powder and the italian seasoning to give it less of a 'bite' the second time around and that seemed to work a little better since the Ital. Seasoning is pretty overpowering if you over-do it.

Easy Vodka Sauce

This was really good! I simmered for about 30 mins longer while my pasta and garlic bread cooked and also added oregano, parsley and basil (at the end), also S&P. I sauteed about 2 cloves of garlic with the butter in the very beginning but will probably use 3 or 4 cloves next time. I'd love to try this with fresh ingredients! We had some left over that we froze -- definitely looking forward to the leftovers!

Bella's Rosemary Red Potatoes

Fantastic! They are as good as they are simple! I lined my pan with foil as to avoid clean-up and used freshly grated pepper and salt. I ended up adding a little more s&p at the end once ?I gave an initial taste test. I sliced my potatoes thinly which cut down on baking time considerably.

Baked Ziti I

This was REALLY great! I added some rosemary and garlic to the sauce to give it some flavor and everything turned out just great! I baked it for about 40 minutes with foil over it and then uncovered it for the last 10 minutes. We reheated it for lunch today and it was maybe even better than last night! I'm adding this to my recipe box... definitely a keeper!!

Garlic Cheddar Chicken

This is truly awesome! In fact, we're making it again tonight! I used parmesan bread crumbs and omitted the salt (the cheese makes it salty enough for us). The bottoms were a little "soggy" but the sides and tops were so crisp that the bottom didn't bother us at all. Served this with mashed potatoes and was very filling. Next time I will try others' suggestion of freezing the cheese then crumbling it in. I scaled the recipe down to 4 but only used three breasts, and those three took up my entire baking dish!

Best Lemonade Ever

This is truly great. SOOOO easy, too!! I had to modify it to 15 servings because my pitcher didn't accomodate the full recipe, but obviously that turned out fine. My husband is a lemonade fanatic and I'm so tired of canned versions... so I was awful happy that this tasted like homemade :)

Awesome Slow Cooker Pot Roast

Really tender and tasteful. My one and only gripe is that that it was a bit saltier than I'd like but I'm certain that is a result of the condensed soup. Even my husband who is a self-professed pot roast hater cleaned his plate

Melt - In - Your - Mouth Shortbread

mmmmmmmmmmmmmmmm mmmmmmmmmmmmmmm mmmmmmmmmm!!!!!!!!!!!!! I'm no baker, but these turned out pretty darn good! I added a tsp. of vanilla extract to the dough, and mixed the butter for a full 20 minutes before adding the additional ingredients. I also refrigerated the dough for about 10 minutes to make it easier to work with when adding it to the cookie sheet. I put them on a sheet with foil and lightly sprayed it so they wouldn't crumble when taking them off. I garnished the second batch with some tiny red sprinkles... mmmmm mmmmm!!!!! These tasted great the following day and were still pretty soft :)

Apple Dumplings I

I didn't make the original recipe as it was written, but with the changes I made this is most DEFINITELY a FIVE STAR recipe! WOW!!!!!!!! I used green apples because they are a little more tart than the red ones, and with all the sweetness going on in this recipe, I am glad I went with the green. I chopped them up into small pieces. Then I sprinkled some cinnamon sugar into the apples before folding them into the dough. I baked them for ten minutes, then flipped and baked an add'l ten mins. Meanwhile, I left out all of the water, used 1/2 c brown sugar and 1/2 c white instead of the entire cup of white. Then, I flipped the dumplings back over, and poured the mixture over the dumplings for a final ten minute bake (so that was 30 mins in total).

Cajun Chicken Pasta

This was pretty good and definitely has potential! I will completely omit the salt next time. It was way too salty! Also, I doubled the sauce, used 3 T of cajun seasoning, and sliced my chicken into cubes which made it very juicy from simmering in the cream. I also added cornstarch, but I think I added a bit too much because it was just too heavy for me (my fault!!). Next time, I'll use about 1.5 T of cornstarch. My husband LOVED this (he usually doesn't like spicy food). It is fattening but relatively cheap to make... so this will probably go into our rotation :)

Chicken Milano

This was pretty good. I tweaked it a bit, though. I couldn't find sun-dried tomatoes in our commissary, so I picked up the DelMonte Italian Style Stewed Tomatoes and used them including their juices. I doubled the sauce recipe, but only used ONE tablespoon of basil. One Tbsp seemed to be the perfect amount since basil seems to be overpowering at times. The finished product was pretty good, but it tasted like it was missing something.... I think next time I'll play with some other spices... probably add a lot more garlic! This is going into my recipe box!! OH!... I also added a splash of Chardonnay and Vodka.

Famous Chicken Francaise

I think this recipe has tremendous potential, but will need some tweaking. My coating stayed on PERFECTLY!... I dipped in flour first, then egg (and left it to marinade for about 20 mins), then flour again, then egg and then finally coated in flour and tossed in the pan. I heated the pan first, then the butter, then put the chicken in and it browned quickly. I also pounded it pretty thin. The coating was perfectly crisp and it even stayed pretty decent with the broth, but next time I think I will keep the broth separate and instead pour everything over linguini.

Savory Chicken Breasts

I'm changing my rating from a 3 to a 4! Made this again last night and tried it with the cream of chicken WITH HERBS soup instead and it made a huge difference. I also seasoned the breasts with a dash of seasoning salt, paprika, garlic, and parsly prior to adding the cheese. We used two breasts but kept the sauce at the given measurements. I made mashed potatoes and used the "gravy" from this dish to pool into the potatoes... REALLY good with them! We'll be making this comfort food again.

Apple Cranberry Crisp

I really screwed this recipe up but it turned out pretty darn good regardless! I ended up mixing everything together in one large pot after I realized I messed it up, then baking it as a mixture instead of layered. Really good!

Floating Island Punch

As the original recipe, I give it 3 stars.... the way I made it, I would give it 5. Here were my modifications: Instead of orange juice and lemonade, I substituted pink lemonade and wild berry concentrates, only used 1/2 pint of sherbet, and added the carbonated things LAST so the sherbet wouldn't cut out the carbonation! I used this for a baby shower and it was a HUUUUGE hit!
