Breaded Parmesan Chicken

I've made this a lot and it has turned out pretty good every time! The coating doesnt stick very well to the bottom and is chunky overall, but still tastes good. I lightened up on the curry powder and the italian seasoning to give it less of a 'bite' the second time around and that seemed to work a little better since the Ital. Seasoning is pretty overpowering if you over-do it.

Easy Sugar Cookies

These were OK. We found them to be rather bland and uneventful. I rolled them in sugar and that just burned the bottoms of them. I won't be making these again. They were, however easy to make... maybe if I dressed them up more (ie: candy or something) they would have turned out better.

Mini Cheesecakes II

I made these for my husband two nights ago and he ate... one. Just one. He said they were very bland and did not taste much like cheesecake at all. Maybe I overcooked them a bit, but I guess that still doesn't explain the lack of flavor. I hate to be the bearer of bad news, but he rated this one a 2.5 :(

Baked Ziti I

This was REALLY great! I added some rosemary and garlic to the sauce to give it some flavor and everything turned out just great! I baked it for about 40 minutes with foil over it and then uncovered it for the last 10 minutes. We reheated it for lunch today and it was maybe even better than last night! I'm adding this to my recipe box... definitely a keeper!!

These turned out really great, much to my surprise! I substituted a half cup of maple syrup and honey since I ran out of Karo syrup, and it added more diverse flavor.

Chicken Milano

This was pretty good. I tweaked it a bit, though. I couldn't find sun-dried tomatoes in our commissary, so I picked up the DelMonte Italian Style Stewed Tomatoes and used them including their juices. I doubled the sauce recipe, but only used ONE tablespoon of basil. One Tbsp seemed to be the perfect amount since basil seems to be overpowering at times. The finished product was pretty good, but it tasted like it was missing something.... I think next time I'll play with some other spices... probably add a lot more garlic! This is going into my recipe box!! OH!... I also added a splash of Chardonnay and Vodka.

Savory Chicken Breasts

I'm changing my rating from a 3 to a 4! Made this again last night and tried it with the cream of chicken WITH HERBS soup instead and it made a huge difference. I also seasoned the breasts with a dash of seasoning salt, paprika, garlic, and parsly prior to adding the cheese. We used two breasts but kept the sauce at the given measurements. I made mashed potatoes and used the "gravy" from this dish to pool into the potatoes... REALLY good with them! We'll be making this comfort food again.

VERY lemony. Next time I will most definitely half the lemon content and refrigerate the floured chicken so it sticks better during cooking. This recipe has potential :)

Melt - In - Your - Mouth Shortbread

mmmmmmmmmmmmmmmm mmmmmmmmmmmmmmm mmmmmmmmmm!!!!!!!!!!!!! I'm no baker, but these turned out pretty darn good! I added a tsp. of vanilla extract to the dough, and mixed the butter for a full 20 minutes before adding the additional ingredients. I also refrigerated the dough for about 10 minutes to make it easier to work with when adding it to the cookie sheet. I put them on a sheet with foil and lightly sprayed it so they wouldn't crumble when taking them off. I garnished the second batch with some tiny red sprinkles... mmmmm mmmmm!!!!! These tasted great the following day and were still pretty soft :)

African Chicken Stew

oh... my... GOSH! This recipe sets a whole new standard of AWFUL! All in all, I wasted three lbs of chicken, a jar of natural PB, and money on spices I will probably never use again. WE ABSOLUTELY *HATED* THIS! We're on our way out to dinner now. What a waste.

Floating Island Punch

As the original recipe, I give it 3 stars.... the way I made it, I would give it 5. Here were my modifications: Instead of orange juice and lemonade, I substituted pink lemonade and wild berry concentrates, only used 1/2 pint of sherbet, and added the carbonated things LAST so the sherbet wouldn't cut out the carbonation! I used this for a baby shower and it was a HUUUUGE hit!

Cajun Chicken Pasta

This was pretty good and definitely has potential! I will completely omit the salt next time. It was way too salty! Also, I doubled the sauce, used 3 T of cajun seasoning, and sliced my chicken into cubes which made it very juicy from simmering in the cream. I also added cornstarch, but I think I added a bit too much because it was just too heavy for me (my fault!!). Next time, I'll use about 1.5 T of cornstarch. My husband LOVED this (he usually doesn't like spicy food). It is fattening but relatively cheap to make... so this will probably go into our rotation :)

Baked Macaroni and Cheese I

I am SOO glad I decided to try this recipe! I consider myself a connoisseur of mac n cheese and I give this one four stars. It had humble beginnings in the pot at first but it turned out really great! I didn't use bacon or an actual onion, but instead used onion powder (a few shakes). Also, I baked it in a 9x13 baking dish since I don't yet have a 2-qt dish (newlyweds, go figure). I only baked it for about 6 or 7 minutes because I was afraid it would dry out. It turned out great! Next time I think I'll add some swiss as well!
