Basic Creole Sauce

I am the author of this recipe and would like to respond to Vincef329. Thank you for your keen insight into this recipe. I will give you the carrot comment. The carrot is not required. The other optional ingredients were a nod to French Classic cooking and perhaps TMI (too much information) and overwhelming in this recipe. In the meantime, I have been introduced to a Creole seasoning called "Slap Ya'Mama" as well as Emeril's "Bayou Blast". Using either one of those will get you where you need to go as far as seasoning. I now have an account called "Fancy Nancy" and per your suggestion, I will rewrite a recipe for that site. Thank you Vincef329.

Banh Mi

I love Banh Mi and this recipe worked well for me. I made some changes to make this a little easier to prepare. I bought a pre-cooked Jenny-O Turkey breast and sliced thinly. I mixed Thai Peanut sauce in with the mayo and also mixed in mint with the cilantro which added a super fresh taste and flair to the sandwich. This recipe made it into my Recipe Binder as one of my favs. Thank you for sharing this recipe.

Chef John's recipes are always tops. I agree on using Russet potatoes! The only thing I do differently is cut the potatoes in chunks.

Vegan Lasagna I

On my quest to find a vegan recipe for company I ran across this recipe. I made a practice lasagna and added zucchini to the second layer and mushrooms to the top layer. I really enjoyed the lasagna but the jewel was the tomato sauce. I think the secret was using the stewed tomatoes rather than regular canned tomatoes. I've already made another batch of sauce for the freezer. Thanks for a great recipe. This one is a keeper.

Easy-to-Eat Pumpkin Walnut Muffins

I made these muffins using my banana nut bread recipe. I replaced the bananas with canned pumpkin puree. The texture is moist and holds together well while holding in your hand and taking a big bite. I love to eat with butter. Makes my mouth water.

Chef John's Mayo Method Steak Sauce
