Best Ever Popcorn Balls

Just made these for my son's pre-school Halloween party. WoW, very yummy! I did add some food coloring to it while boiling to make it orange, and a little bit of vanilla. The recommendation to use latex gloves was helpful - the trick is to keep spraying on the Pam while forming the balls. I used almost three bags of microwave popcorn and it made 16 balls. Very messy, but well worth the effort. I have not had such chewy and tasty popcorn balls in years, and have missed them. Thank you so much Kelli!

Broccoli Chicken Casserole I

I've been making this casserole for over 20 years, but my recipe called for a can of cream of chicken soup, tablespoon (I just use a dollop of Miracle Whip) mayo, and add a tablespoon or two of milk. After layering the broccoli, chicken, soup mix, I squish a tube of Ritz crackers into crumbs, then layer that then the cheddar cheese. Even my picky middle child likes this recipe. I make for my friends who aren't able to cook, had a baby or surgery etc. Always get compliments, since it is such a comfort food. Since I am on WW now, I modify it with Fat Free Cream of Chicken soup, whole wheat Ritz crackers and low fat cheese.

This has been our family favorite tradition for Christmas morning. One of our favorite toppings is thawed strawberries (the frozen kind in sugar) with a dollop of sour cream.

Hot Buttered Rum Batter

I have been making this batter recipe for years during the Christmas holidays, and this is just holiday heaven in a mug (and it will sneak up on you with a good buzz!). For a non-alcoholic version I make for the kids, use hot apple juice in place of hot water and rum.

Gingerbread Men

I have never made gingerbread cookies and wanted to give it a shot, followed the recipe exactly. The first time I made this dough, it was very dry and cracked when trying to cut out shapes. So I just balled them up, pressed with a fork and baked. They still tasted great. On Christmas Eve, I really wanted to make gingerbread men, so this time I added a splash of milk. It was too soft and frustrated the kids but at least they were cutting out if we were VERY careful. They are very tasty, soft and chewy, but I am determined to get it right so that they cut out easier. Does it need more butter or what?

Smooth Sweet Tea

I grew up with my southern mom's good ol' sweet tea (but she uses half Lipton tea bags and half Constant Comment made by Bigelow - it just adds a nice sweetness/flavor to it and helps not be as bitter). Now I am making my own pitchers of tea and I had never heard of adding the baking soda which is wonderful. Thank you for sharing that tip!

Easy Pumpkin Muffins

I just made these for the first time tonight for my sons' classroom Halloween parties for tomorrow, and they are mucho yummy! Even my one kid who doesn't like pumpkin gobbled them up. They are very moist. Just used spice cake mix, but still added dashes of ground cinnamon, clove & nutmeg. Sprinkled the tops with brown sugar AND also some orange colored sugar I had on hand just for some festive color on them before baking. Had to slap hubby's hand away after he ate four mini muffins!
