Banana Crumb Muffins

These are amazing! The changes I made was I added 1tsp vanilla to the mashed bananas, I added some cinnamon and nutmeg to the dry ingredients, I doubled the crumb topping, adding a little extra flour to make it extra crispy. I made a double batch and got 23 muffins. I seriously cannot wait for my family to walk in the door...they are going to flip out! I'm throwing out all of my old banana muffin recipes, this is the best ever!

Urban Legend Chocolate Chip Cookies

I've been making these cookies for several years. The only thing I do differently is use 1/2 chocolate chips and 1/2 butterscotch chips...yum!

Fluffy Whole Wheat Biscuits

I started making this recipe and when I went to grab the butter, I realized that all I had was SmartBalance buttery spread. I was nervous about how they would turn out, but they were actually perfectly delicious. I didn't roll them out, but just dropped spoonfuls onto my pizza stone. My husband ate at least 5 of them by the end of the night!

Belgian Waffles

My absolute favorite waffle recipe!!!!!! It is time consuming and messy, but soooooooo worth it. I think I'll try and make the batter the night before next time because it's so hard to wait that hour for the batter to rise...I get so impatient and hungry by the time I finally get to eat one!!!

Soft Oatmeal Cookies

Oh yeah!!! Quite possibly the best cookie ever! I shorted the sugar just a bit and added some raisins and chocolate chips, other than that, I followed the recipe exactly. The one thing I will do differently next time is to use unsalted butter. Or if I do use salted butter, I'll omit adding the extra salt because I can taste a tad more salt than I would like to be tasting...but I know it's my fault for using salted butter so I still give these cookies a 5 star because they are just awesome! They came out all fluffy and soft and chewy, I've never been able to get my cookies to turn out this way, so I'm totally excited about this recipe, it's definitely going in with my all time favorites! Thanks so much for sharing this recipe!

Potato Chips

I'm giving these a 5 star because I can see the potential. I think if I would have had a mandoline and used parchment paper they would have been a definitely three star. Instead, I cut them by hand and used a cheese slicer and I just didn't get them thin enough. And they took FOREVER to cook, even though some were paper thin I think they cooked for at least 10 minutes. My dh burned the heck out of his hand because the plate was so hot after the second batch. But they were really good, and if I ever buy a mandoline, I'll make them again for sure.

Peanut Butter Chip Chocolate Cookies

These were awesome. I made them big and they needed about 12 minutes to cook. I followed the recipe exactly except substitued not quite a 1/2 cup brown sugar and not quite a full cup regular sugar, that way it wasn't quite as sweet. They are sooooooo good. I couldn't stop eating the batter as I was spooning it onto the cookie sheet!

Buttery Rolls

I made these for Thanksgiving and everyone was so impressed. I used 3 cups bread flour and 1 cup whole wheat and they were absolutely perfect. I didn't cook them right away after putting them into the pan as we still had a couple of hours until the turkey was ready. So they sat in the pan and rose for a couple of hours before I popped them in the oven at the last minute and everyone received piping hot rolls with their dinner!

No-Bake Peanut Butter Cookies III

I've been craving a good peanut butter oatmeal cookie for the past couple of weeks. These are fantastic. It really hit the spot. I followed other's advice and used a little less sugar and a few more oats. I used regular oats and they seem to have turned out fine. They are still cooling right now, but I've eaten enough of the batter to know they are going to be perfect!

Chocolate Cavity Maker Cake

Um...this was fabulous! I made it for my husbands birthday, because he requested chocolate cake this year. I'm so glad I stumbled upon this recipe. He made me promise to make it every year from now on! I didn't put any sort of glaze or frosting on it. Just dusted it with a bit of powdered sugar to make it look pretty. I think adding frosting would be overkill as it is such a rich and chocolatey cake on it's own.

Lentil Soup

I used vegetable stock instead of water, doubled the garlic and used balsamic vinegar. I added a big extra handful of spinach. My husband really wanted me to add some meat to it, so I took out a bit for myself and then browned some ground beef and threw it in with some cumin. Both were absolutely delicious. I'll make this one again and again!

Good Old Fashioned Pancakes

By far, the best pancakes I have ever made! Thanks so much for this recipe! I make pancakes once a week for my kiddos and this will be the one I use for years and years to come! Edited: I wanted to add that now that I have made this recipe close to 100 times, the only changes I have made is to only add 1/4-1/2 tsp salt, because I used salted butter. Other than that, I don't change a thing! This truly is the perfect pancake recipe.

Pizza Dough I

This is my favorite pizza dough recipe. I actually just throw it all together in my bread machine on the dough cycle and let it do the kneading and rising in there. I use Olive oil instead of Vegetable oil, but other than that, I do everything else exactly as is.

Cheesy Onion Biscuits

I make all kinds of homemade breads. Probably three times a week I make some sort of bread from scratch. My husband said that these biscuits were his absolute favorite! I doubled the recipe and I added a little extra cheese, about 3/4 cup, and threw in a few shakes of parmesean cheese as well. I didn't have any buttermilk on hand, so I substituted regular milk with 1 1/8 tsp cream of tartar, which I let sit for about 10 minutes. I also sauteed the onions in a small frying pan with a Tbsp of butter until they were translucent. The results were phenomenal!!!! The biscuits were super moist and had the most amazing flavor, just the right mix of cheese and onion! This is going in with my favorites for sure!!!

T's Sweet Potato Fries

These are great, I've always loved sweet potato fries. For those looking for something with the same texture and crunchiness as a regular french fry...well, you will not find it here. Sweet potato fries are softer, and thus don't crunch up like regular potatoes. Keep that in mind when making these and you won't be disappointed. They are really, really good!
