Chewy Coconut Cookies

Don't change a thing!! These are perfect cookies! Chewy on the inside, crispy on the outside! The perfect blend of coconut and buttery goodness! Yeah, these are going in the box of favorite recipes for sure!!

Mediterranean Puff Pastry Chicken

This was so delicious!! To eliminate some of the calories and fat I substituted whole wheat phyllo dough for the puff pastry. Other than that I pretty much followed the recipe exactly, except I cut the 2 chicken breasts in half, making 4 pieces. It was really great, though I do plan on making changes the next time. I think I will sprinkle some salt over the chicken breasts and add more feta, pesto and a few more sundried tomatoes for even more flavor. I loved the crispiness of the whole wheat phyllo dough and I plan on making it that way everytime!

Guinness® and Chocolate Cheesecake

My turned out very mousse-like. I followed others advice and wrapped the bottom of my springform with foil, cooked in the water bath for 60 minutes, let it sit in the oven with door ajar for another 60 minutes. Then I chilled it for 8 hours before we ate it... I wonder what the problem was?? In addition to that, I wasn't a huge fan of the flavor. I felt it was too sour tasting. I'm a huge guinness and chocolate lover, but this really didn't do it for me, unfortunately. Other people at dinner said they loved it...but I wonder if they were just trying to be nice? I won't be making this one again.

Whole Grain Pancakes

These had a really nice flavor. I found them a little difficult to cook, though. I had to grease my pan more than I'm used to because they tended to stick, even to my amazing, expensive, non-stick pan! They also got brown really fast and didn't set up as quickly in the middle, so I had to turn the temperature down quite a bit and cook them much longer. I made a few changes to the original recipe. I didn't have any cornmeal, so I substituted wheat germ. I also didn't have any buttermilk, so I used lemon juice and milk. I added some cinnamon and vanilla for a little extra flavor. I think next time I will leave some of the sugar out of it, because the pancake was pretty sweet. All in all this is a very nice base recipe. I think with a little more tweaking it could be close to perfect.

Aunt Phyllis' Magnificent Cheese Ball

I have never made a cheeseball before. I followed the advice of others and added about twice the amount of powdered cheese to it. I also added garlic powder. It was a huge hit!

Awesome Slow Cooker Pot Roast

This was fantastic! I made a few changes as suggested by others here: I used beef broth instead of water, I added a container of fresh sliced mushrooms, and I rubbed the meat with salt and pepper and seared it before putting it in my slow cooker. I think my new crockpot doesn't get quite hot enough, because I eneded up cooking it for 5 hours on low and an additional 4 hours on high before it was finally ready to eat. But it was worth every second of the wait! I served it with cubed sweet potatoes and carrots, YUM!

Peanut Blossoms II

These were very tasty. I followed the recipe exactly and hoped for a little more peanut butter taste, I might add more peanut butter next time. I rolled them in green and red sugar to make them festive for Christmas.

Strawberry Dream Cake I

Absolutely fantastic!!!!! I followed some of the suggestions on here and used strawberry cream cheese in the cake, I also substituted a Vanilla Cake mix for the white cake, which called for three eggs, so I used two whole eggs and two egg whites. The frosting was awesome. I was a little concerned with it being too runny especially after reading all the reviews...I added a couple tablespoons of powdered sugar and a couple teaspoons of flour. I wish I wouldn't have added the extra sugar, because it made it a pinch sweeter than I would have liked it, but that still didn't stop me from licking the spoon like crazy! I put the frosting in the fridge for a couple of hours, and even stuck it in the freezer for about 20 mins because I was nervous about it, but it ended up being absolutely perfect. It made a ton of frosting and I put a thick layer of frosting in between my cake layers along with a nice layer of fresh strawberries. I think I could have skipped the extra sugar and flour in the frosting and it would have thickened up fine in the fridge after a couple of hours. I also put a couple of drops of red food coloring in the cake batter, because some of the review said the cake turned a strange grey color, and this was for my 4 year old daughters princess party so I wanted to make sure it was nice and pink. Tasty Lentil Tacos

These tacos were exceptional! My husband had no idea what I was making for dinner and he came in while it was simmering and commented that it smelled absolutely delicious. They tasted even better than they smelled. He couldn't believe there wasn't any meat in it. My 2 and 3 1/2 year old daughters gobbled them up as well. We actually served them on the fry bread from the fry bread taco's recipe that someone else mentioned in their review. I mixed the lentil mixture with a homemade salsa made with tomatoes, onions, cilantro, garlic salt and chili powder pureed in my blender. Scooped some on the fry bread, topped with a little cheese, lettuce, tomatoes, onions, cilantro, avocado and a touch more salsa. My husband said this is one of his all time favorites. Next time I make it, I think I'll save some calories by skipping the fry bread, as delicious as it was, and heaping mine on top of a bed of lettuce for a rocking taco salad. I'm sure these lentil taco's will become a regular meal in our house. Thank you so much for sharing this recipe!

T's Sweet Potato Fries

These are great, I've always loved sweet potato fries. For those looking for something with the same texture and crunchiness as a regular french fry...well, you will not find it here. Sweet potato fries are softer, and thus don't crunch up like regular potatoes. Keep that in mind when making these and you won't be disappointed. They are really, really good!

Cheesy Onion Biscuits

I make all kinds of homemade breads. Probably three times a week I make some sort of bread from scratch. My husband said that these biscuits were his absolute favorite! I doubled the recipe and I added a little extra cheese, about 3/4 cup, and threw in a few shakes of parmesean cheese as well. I didn't have any buttermilk on hand, so I substituted regular milk with 1 1/8 tsp cream of tartar, which I let sit for about 10 minutes. I also sauteed the onions in a small frying pan with a Tbsp of butter until they were translucent. The results were phenomenal!!!! The biscuits were super moist and had the most amazing flavor, just the right mix of cheese and onion! This is going in with my favorites for sure!!!

Beef Spinach Hot Dish

This was actually really good. I used fresh mushrooms and fresh spinach and cream of mushroom instead of cream of celery. I found the recipe when searching for recipes using ingredients that I had on hand that I needed to cook up asap. It was a nice suprise and my family all enjoyed it.

Potato Chips

I'm giving these a 5 star because I can see the potential. I think if I would have had a mandoline and used parchment paper they would have been a definitely three star. Instead, I cut them by hand and used a cheese slicer and I just didn't get them thin enough. And they took FOREVER to cook, even though some were paper thin I think they cooked for at least 10 minutes. My dh burned the heck out of his hand because the plate was so hot after the second batch. But they were really good, and if I ever buy a mandoline, I'll make them again for sure.

Beth's Spicy Oatmeal Raisin Cookies

These were the most delicious cookies I've made in a long time! I didn't have butter flavored shortening, so I just used regular shortening and they turned out awesome! Crispy on the outside, soft on the inside. I added a few extra raisins because I love it that way. I also didn't have any cloves, so I substituted pumpkin pie spice. My whole family loved these cookies.
