Sour Cream Chocolate Chip Cake I

Because I was taking it to a block party, I doubled the recipe. I also baked it in a bundt pan since others mentioned having trouble with the middle not getting fully baked. Even in the bundt pan, the middle was slightly under-cooked, but was still edible. Following another reviewer's example, I sub'd half the white sugar for brown, to give it more of a cookie flavor. That worked! The cake was VERY yummy, moist and went over very well at the gathering. I absolutely will try this again in the bundt pan without doubling the ingredients.

Tuna Noodle Casserole from Scratch

A VERY good starting point! Based on my family's preferences and some of the previous reviews, I made a few changes. We loved this! Its so nice to have a tuna casserole that doesn't include soup.

Spicy Shrimp and Grits

Very good! Based on other reviews, I used low-sodium broth and didn't add salt, and greatly reduced the amount of cheese (personal preference). Quick, easy, delicious!

Sour Cream Biscuits

PERFECT! I can finally quit looking for THE biscuit recipe. The effect of the sour cream leaves them perfectly moist, yet allows them to be fluffy. Because of what I was serving them with, I added a touch of herbs and cheese, but I can tell they will stand on their own just fine. My youngest (aka Mr. Finicky) LOVES them! THAT's saying a lot!

Slow Cooker Beef Stew I

Despite owning two crock pots, I don't have a lot of experience with them. That may change, thanks to this recipe. The stew was delicious! The only things I measured were the flour and broth; just guessed at everything else. Toward the end, I added cornstarch mixed with water just to thicken it up a bit, but followed the recipe to about 98% otherwise. (Don't like bay leaf, added more broth, added pepper to my serving.) Hubby had two bowls and our super-finicky youngest said, "Good dinner, Mom." Whoa!

Oven Fries

Absolutely amazing!! So delicious!! I WILL be serving these again. I adjusted and added seasonings to our taste, and flipped them at half time. I also followed another's advice and reduced the temp to 425, but I think my oven is a little hot. Do yourself a favor and try these! YUM!!

Tasty Tuna Burgers

These were great! I made a few minor changes to suit our tastes, but otherwise followed the recipe. Over the years I've discovered tuna patties need both egg AND mayonnaise for texture, taste and moisture. I had no problem at all with them falling apart. Chiling for 30 minutes usually takes care of that. This one's a keeper and I will be serving these again.

Stewed Tomatoes (Gobbledygook)

Not too bad. I reduced the sugar to 1/4 c and it was still way too sweet. The bread gives it a very "bready" taste so I think I'll try saltines or a mix of both next time.

Lemon Thyme Rice

Awesome! I'm always on the lookout for a rice dish that is versatile AND yummy. I haven't found many. THIS is definitely one though! I love it and I'm sure I'll be using it frequently. Tonight I served it with salmon, but can see it side-lining chicken, pork, other types of fish, and even beef.

Oregon Salmon Patties

VERY good! I made a few alterations (including NOT using any of the liquid from the salmon) and baked instead of fried, but they were fabulous. For those who have trouble with the patties falling apart, try mixing the ingredients and then refrigerating the mixture for about an hour. It makes the patties easier to handle and clling together better.

Cauliflower Side Dish

VERY GOOD! Using what I had on hand (frozen cauliflower, margarine, unseasoned bread crumbs) and tweaking it a bit to our liking (added Italian herb blend, Mrs Dash, garlic powder), it turned out excellent. The family loved it and has asked that I make it again. We ate the entire batch! Not the healthiest way to prep a vegetable, and will keep that in mind when deciding what to serve with it, but will definitely be serving it again.

Southwestern Chicken and White Rice

Not bad at all! My husband and two sons had seconds, saying "mmm-mm" the whole time. My changes (hardly worth mentioning): added a bit of taco seasoning, added diced bell pepper to the chicken/onion, used long-cooking rice, and used black beans instead of kidney. I see this as a versatile dish, just waiting for my adjustments. My youngest (10 yrs, extremely finicky) told me, "The next time you want to serve Mexican food, make this". I think I'll use his suggestion.

Cheesy Baked Grits

100 STARS! These are definitely the BEST grits I've ever had, and I credit that to cooking them in milk. I can't believe in all the years I've been making grits, I've never cooked them in milk. Dee-lish and makes such a difference!! I had to substitute American for the Cheddar (all I had on hand) and mixed the Parmesean in since others said it got crusty on top. This is now my only way to prepare grits, and I WILL have Cheddar on hand next time!

Pinka Butter Cookies

Husband and sons loved this; I thought it was just okay. Ten stars for simplicity! If I make it again, I'll definitely top it with chocolate chips as soon as it comes out of the oven. Too bad I didn't have any this time.

Baked Fish and Rice

It wasn't too bad, I guess. (We ate it.) Made a few minor changes according to previous reviews: cooked the rice on the stove before putting it in the baking pan, used mixed veggies and added a salmon seasoning to the fish. Glad I did all three of those changes. I'll probably try this again using salmon and leave the veggies out, just serve those separately. I was VERY surprised at how great the french fried onions go with fish! Oh, and I might add a 1/4 of chicken broth to the pan; rice & veggies were just a tad dry.

Yummy Lemon Salmon Burgers

Incredibly delicious! Didn't have bread crumbs so I used crushed unsalted saltines, and let the mixture sit for about 10 mins to let it bond together. I also made four patties instead of six. The sauce went perfectly with these. I served this with Onion Rice from this site with some veggies and all four of us LOVED dinner tonight. Thanks MELDS!
