Southwest Chicken Bake

Very yummy!! To suit my family, I made it a one-dish dinner, combining everything except the cheese, which was added at the end of baking. I cooked the onion with the chicken and used chicken broth to cook the rice. This is an extremely versatile dish, so I'm sure I'll be using this frequently without it getting boring.

Breakfast Upside Down Cake

The family loved it! A very versatile dish that I will be using often. I used two medium potatoes (fried in bacon grease), left out the garlic & green pepper, added two more eggs and about 1/2 c milk. This baked up nicely in a deep glass pie pan, but next time I might give the sides of the pan a light non-stick spray.

My Crispy Mashed Potato Pancake

Loved it! Based on the reviews and what I had on hand, I omitted the chives and ended up having to triple the flour. (Maybe my potatoes were too wet.) I also added salt & pepper and was glad I did. Next time, I'll reduce the heat to medium after I cover the pan. It was browning too quickly. Note to self: make sure to ALWAYS make too many mashed potatoes from now on!

Diane's Beef Stroganoff

Fantastic, with the changes I made based on other reviews and what I had on hand. I used ground beef, only a 'squirt' of ketchup, several dashes of Worcestershire sauce and fresh baby bella mushrooms. The family loved it!

Banana Oatmeal Bread

Sub'd butter for the shortening since that's what I had. Made (29 lg) mini muffins. The flavor and texture are wonderful! But the domes leave much to be desired. In the next batch, I'll reduce the sugar to 3/4 cup.

October Oatmeal Pumpkin Muffins

Followed the recipe as written except for subbing all-purpose flour for the wheat. The level of sweetness and moisture is incredibly perfect! Will definitely be making these again, but will reduce the amount of pumpkin pie spice and nutmeg just a bit because I feel like they masked the pumpkin flavor significantly. While these muffins are wonderful as is, I'll also experiment with add-ins such as raisins, chocolate chips, pecans, etc...

No Bake Bumpy Peanut Butter Nuggets

The taste was just okay. We didn't care for the cinnamon with the peanut flavor so I'll leave that out next time. Yes, there will be a next time. I used apple juice concentrate; will use honey in the next batch. The texture is nice, and they served well as a snack and/or something to hold us over until the next meal. I pressed mixture into mini muffin tins then wrapped each one in plastic wrap for the convenience of grab 'n go.

Make-Ahead Mashed Potatoes

A MILLION STARS!! This is the ONLY recipe I've found that really works. The potatoes were made the day before Thanksgiving, and at our T-day dinner they were light, fluffy, delicious. No gooey texture at all. My only change was after mixing in the butter, I put the potatoes in a lightly sprayed baking dish, covered them with foil and baked them at 350 for about 20 minutes. Seriously, these were perfect! Will be using this recipe ALOT!

Blueberry Cream Muffins

1,000,000 stars!! Absolutely perfect in every way! As an experiment, I filled one muffin tin without a single berry in it and sprinkled cinnamon on top, just to see if the batter would be versatile. YUP! I'll definitely be playin' around with other fruits and such, using this as my base.

Dannon Chocolate Chip Muffins

3.5 stars. I used low-fat vanilla yogurt, added a little milk, and upped the choco chips to 1/2 cup. The batter was extremely hard to work with, and the muffins have a salty taste. However, they baked up light & fluffy, the texture is moist, not chewy and they are easy on the eye.

Choc-Oat-PB Bars

Very good!! Even with a few substitutions, they came out great! (I had only 6 tbsp butter & used 2% milk.) The suggestion to stir on med heat until the sugar dissolved was a big help. Family loved them. So easy, so good and so going into my dessert rotation.

Very good, very easy and it's convenient to have the ingredients on hand. (I didn't use the packaged rice.) It was very salty though & will have to make adjustments for that. The family loved it!

Sour Cream Chocolate Chip Cake I

Because I was taking it to a block party, I doubled the recipe. I also baked it in a bundt pan since others mentioned having trouble with the middle not getting fully baked. Even in the bundt pan, the middle was slightly under-cooked, but was still edible. Following another reviewer's example, I sub'd half the white sugar for brown, to give it more of a cookie flavor. That worked! The cake was VERY yummy, moist and went over very well at the gathering. I absolutely will try this again in the bundt pan without doubling the ingredients.

Tuna Noodle Casserole from Scratch

Sour Cream Biscuits

PERFECT! I can finally quit looking for THE biscuit recipe. The effect of the sour cream leaves them perfectly moist, yet allows them to be fluffy. Because of what I was serving them with, I added a touch of herbs and cheese, but I can tell they will stand on their own just fine. My youngest (aka Mr. Finicky) LOVES them! THAT's saying a lot!

Slow Cooker Beef Stew I

Despite owning two crock pots, I don't have a lot of experience with them. That may change, thanks to this recipe. The stew was delicious! The only things I measured were the flour and broth; just guessed at everything else. Toward the end, I added cornstarch mixed with water just to thicken it up a bit, but followed the recipe to about 98% otherwise. (Don't like bay leaf, added more broth, added pepper to my serving.) Hubby had two bowls and our super-finicky youngest said, "Good dinner, Mom." Whoa!
