Garlic Creamed Chicken

Zucchini Tomato Toss

OMG! Talk about yummy! This is my new favorite summer salad! I took it to a 4th picnic last night and it disappeared so fast. Everyone raved about it and wanted the recipe. What a great way to use up the zucchini and tomato abundance coming from the garden! I followed the recipe for the dressing exactly and used a sweet onion instead of scallions. I also sliced the onion and zucchini very thin with my mandolin. I also added more tomatoes (because I had them and 2 looked very skimpy). The only thing I would do differently next time is that before serving, drain the liquid off and add more of the 'dressing'. Thanks for sharing this fabulous recipe!

Zucchini Pasta Bake

WOW!!! Was this good! It will definitely become part of our menu rotation. I gave it only 4 stars because I changed the original recipe. I followed other's suggestions and added cream of chicken soup and Brats; because I planned on grilling them but it rained, so I just cooked them off on the stove and threw them in the mix. I also used bread crumbs instead of crackers, but next time will mix cheese and crumbs 50/50. This is definitely a keeper! Thanks!

Tater Tot Bake

I'm not sure what I thought I was getting, but this recipe didn't live up to all the rave reviews. Though it wasn't bad, it actually looked and tasted like something one of my children would make on thier first try to make dinner for the family. Nothing special, just okay.

General Tsao's Chicken

My husband gives this a 10!! I took the advice of several other reviewers and decreased the amount of cornstarch (3 Tbls),sugar (1/2 C), and vinegar (1/8 C) in the sauce, but added 1 tsp of chili flakes instead of the peppers at the end. Also, I cut out the deep frying, as we are trying to cut out the fat in our diets. I just simply stir fried the chicken in a bit of vegetable oil and added the sauce and green onions. We didn't even miss the heavy breading! We served it over steamed rice and had some steamed snow peas to round out the meal. I'll definitely be adding this figure friendly version of our favorite take-out to our regular menu!

Baked Dijon Salmon

I did not like this at all. I think it was the sweetness of the honey that I found unappetizing though my husband loved it. My daughter ate it after scrapping off the topping and adding enough lemon juice for an entire salmon. So I rate it down the middle.

Chicken and Cheese Stuffed Jumbo Shells

My whole family loved this recipe, even my very picky 9 year old asked for seconds! And she loved helping stuff the shells! I added some parmesan cheese because I had only 1/2 the cheddar requested. We will definitely put this recipe on a regular schedule!

Buckeye Balls II

Charlotte's Tortellini Soup

Very tasty, but next time I will cook my tortellini seperately and add it to individual bowls because they soaked up all my soup liquid. When I went back to reheat a bowl the next day, I had to add more liquids. It was just a hassle I wasn't prepared for. I'll remember it for next time!

Suki's Spinach and Feta Pasta

Great and very tasty! We'll be fighting over the leftovers! I just added more spinach, almost a whole bag, because we really like it and the I used a can of diced tomatoes because the fresh looked terrible in the store. It was great even with the changes.

Italian Summer Squash Polenta Bake

My family loved this recipe, and it was a great new way to use the squash and zucchini coming out of the garden. I baked my polenta instead of frying it, and I also added the extra flavor of using Sun-dried tomato polenta. Very quick and easy. Delicious!!
