Fry Bread Tacos II

Reviewed: Oct. 27, 2007
These are awesome for just the Fry Bread alone! Best Bonus: I found that they make up quite large and only 1 taco filled fry bread can easily satisfy my teenage sons! Everyone like the taco's that way for a change. Yummy too for doing a dessert with the cinn/sugar/honey & also try it with ice cream. **Update** I have made these several times per the resquest of my teens--the first few times I struggled a bit with the dough. Hints to help make the dough easier to handle: 1) I scalded my milk before adding to flour mixture. 2) Make sure you knead it at least the 5 min. 3) Make sure your oil is a 365.

Bourbon Pecan Chicken

Reviewed: Oct. 16, 2008
The whole family enjoyed this. By mistake I breaded the chicken by dipping in egg & then into the pecan/bread crumb mixture (instead of following the recipe)---but, it worked fine browning the chicken nicely. I also, went by a previous reviewers suggestion and sauted the chicken for a few minutes on each side and then baking in 375 oven for about 20 min. Also, as per several reviewers I doubled the sauce, but, ended up with too much--next time I won't double.

Sarah's Applesauce

Reviewed: Oct. 16, 2008
This is how I've always made my applesauce, but, I've never really measured anything. This is why this is such a good recipe---the measurements are spot on. Very good!

Wow...really good, really easy...why buy? So much better! I only made a quarter of the recipe & still have plenty left over. I did use dijon mustard.

Playgroup Granola Bars

Reviewed: Nov. 5, 2008
Don't let the name fool you....these are not only for little kids! Made up a batch for a woman's meeting & they didn't make it out the door. The bars where eaten all up by my teens and husband. Like many of the reviewers already said...easily can add your own 'extra's'.

Grandma Johnson's Scones

Reviewed: Nov. 8, 2008
Made a batch up for a brunch & everyone loved them! It was the first time making scones & this recipe makes 12 HUGE scones....next time I'll probabley make smaller ones. I can see where you could easily add dried cherries, choco chips, etc....to change up the flavor.

White Chocolate Fruit Tart

Reviewed: Nov. 9, 2008
Wow! Excellent! Made for hubby's birthday and he loved it & so did everyone else. I know several reviewers had problems with the crust, but, I thought it was excellent---very shortbread like. It's not like a pie crust, so, I didn't even bother rolling it out because it was way too soft. I just dropped it in my pan and took a spatula (used my finger too) and pushed it around the pan & up the sides until it was even--really didn't take much time at all. The only mistake I made was that I didn't thicken the glaze enough, next time I'll cook it longer--the tart still came out excellent.

Cranberry Orange Cookies

Reviewed: Nov. 30, 2008
Loved this recipe! I think on of my favorite cookie recipes so far on AR. Yummy holiday cookie. One large orange give enough juice and zest called for in recipe. Chopping the fresh cranberries in the food processer worked great.

Satiny Chocolate Glaze

Reviewed: Jan. 25, 2009
This has to be one of the easiest & tastiest 'frosting' type recipes I've ever made. Used with Black Magic Cake & Rick's Buttercream Frosting (both from AR). OH MY GOODNESS! Excellent cake for the chocolate lover.

Honey Garlic Vinaigrette

Reviewed: Oct. 9, 2008
Really easy to put together & a lot less $$$ then buying pre-made dressing. Hubby loved the strong garlic flavor, me...not so much. Next time I'll add less garlic. Still yummy on the greens.

Fish Tacos

Reviewed: Feb. 26, 2009
These were excellent. The batter was light, the sauce fantastic. Cut the fresh cod in diagonal slices. The recipe calls for corn tortillas, but, we prefered the flour with these. The only change I made was to use 1/2 the pepper, but, next time I'll use close to the whold amount because it was not too hot.

Cornbread Dressing I

Reviewed: Feb. 27, 2009
A terrific dressing but, kind of a pain to make--several steps & lots of dirty dishes..lol. To help with the time & mess element I made everything the night before and put together right before stuffing the turkey. I sub. one can of cream or chix soup for one broth and sauted my onions/celery in the butter. Made my own flavorful corn bread (which added to the mess). Wasn't sure if I would like the chopped eggs, but, glad I tried them--think they added to the dressing & will use them next time.
