Chicken Katsu

Winner Dinner! Everyone loved this. I ended up having to change it a bit when I realized I didn't have enough chicken breasts for 6 of us & had to stretch it. Instead of full breats, I cubed it in 1"-2" pieces and then followed the recipe directions (including pounding them)--however, this change did require using more flour/egg/panko bread crumbs. Basically I ended up making chicken type nuggets (only better!). Places the nuggets over Jasmine rice & topped with Sweet & Sour sauce: 3/4 c. white sugar, 2T. brown sugar, 1/3 c. white vinager, 2/3 c. unsweetened pineapple juice (save chunks), 1/4 c. soy sauce, 1T. Ketchup, 2T. cornstarch. Boil until thickened and then I added 1 thinly sliced green pepper & cut up pineapple chuncks. Topped with sliced green onion. Fed my family of 6 for a lot less $$$$ then the local Chinese carry-out & they said they liked mine better! :)

Fry Bread Tacos II

These are awesome for just the Fry Bread alone! Best Bonus: I found that they make up quite large and only 1 taco filled fry bread can easily satisfy my teenage sons! Everyone like the taco's that way for a change. Yummy too for doing a dessert with the cinn/sugar/honey & also try it with ice cream. **Update** I have made these several times per the resquest of my teens--the first few times I struggled a bit with the dough. Hints to help make the dough easier to handle: 1) I scalded my milk before adding to flour mixture. 2) Make sure you knead it at least the 5 min. 3) Make sure your oil is a 365.

Chinese Chicken Fried Rice II

This is one of those recipes you can easily tweek to your own tastes. I added peas and green onions at the end with the egg. Only used 1/2 of the pepper called for & used seasme oil instead of the veg. oil. Thought it made a very good side. Will make again!

Fast and Friendly Meatballs

Yes, these are fast and friendly! I did season them more as suggested by SandraM...1/2 t. sage, 2T grated Parm. cheese, onion & garlic powders, s&p. Used with the Pasta w/Tomato Cream Sauce from this site for a winning combination. Family liked it & they didn't even know that it was ground turkey instead of beef.

Mashed Potato Soup

What a terrific way to use left over mashies. A good basic recipe as is, but, you can easily 'doctor' it up a bit. I ended up adding fresh parsley, a teaspoon of chix bouillion, extra onion, extra mashies, grated some cheese into it and added bacon. You could really add about anything to suit your families tastes.

Cracked Sugar Cookies I

A really good sugar cookie. The dough was easy to handle & roll. This reminded me of the sugar cookie dough you can buy pre-made in the refrig. section (only better!). I think the dough would work well for desserts that call for a sugar cookie base. I had all the ingred. on hand so a quick & easy cookie to make.

Simple, Classic Chicken Potpie

Classic comfort food! I made my own crust...so easy: 2 cups all purpose white flour, 2 1/2 t. salt, 1/2 cup vegetable oil, 1/4 cup cold milk, waxed paper. Place flour and salt in small mixing bowl. Measure milk and oil, then pour together over flour. Quickly stir with a fork (do not over mix). Press dough into ball--do not knead and cut ball in half. Working with each half, press into flattened circle and place between 2 sheets of waxed paper. Using a rolling pin, roll each dough half to size needed to cover pie plate. Remove top waxed paper and using bottom paper to assist, flip crust over onto pie plate. Then remove second wax paper.

Amish Sugar Cookies

These are not what I was expecting....kind of tastes like a sugar cookie, but, not nearly the same texture. They do melt in your mouth, which makes them on the dry side and fragile--but, sitll good. I will say the dough is excellent to work with, very easy to use my 1.5" cookie scoop and put 16 balls on each sheet--from start to finish is went fast and it made up a large amount of cookies.

Rosemary Turkey Meatloaf

This is one of those recipes you will either love or hate. It is really different----but, I loved it! Great use for ground turkey--which can end up bland in some recipes. LOVED the use of fresh rosemary. I made a few changes---I used 2 lbs. of ground turkey (just because I had it), & only 1/2 cup milk & 1 cup Italian Bread Crumbs & 1 cup plain bread. By accident forgot to add the balsamic vinegar! I'll have to try it next time,---now I'm curious if it will be just as good with it. Per previous reviews I halved the amount of topping. I'm glad I did, because I thought it was just sweet enough. However, I read the amount wrong on the Tomato Sauce and only ended up adding 1T. with the brown sugar & dijon---I'll do the same next time because I was happy with the topping.

Super Easy Artichoke Dip

Made this because I had some sun-dried tomatoes to use up. I thought it tasted even better then the regular artichoke dip. I took it to a party, and it disapperared before most of the other appetizers on the table and also before the other regular artichoke dip someone else brought. Lots of positive comments. Do not omit the sun-dried tomatoes--it makes it extra good!

Oven Omelet

Nice basic recipe. I made this for dinner so I added chopped onion, chopped red pepper, more cheeses (a combo of a few) & a few dashes of hot sauce. I used a 9x13 pan...so used 11 eggs, 2.5 cups of hash browns, 1.5 c. milk & extra of all the rest of ingreds.

Scalloped Potatoes and Onions

Good side dish. The only changes I made was to add fresh minced garlic & some white sharp cheddar cheese to the sauce . I think it would have tasted just as good without the additions. Easy!

Pretzel Coated Fried Fish

Followed the recipe, except used talapia instead of cod & boy where these good! Thought the seasoning was perfect. Was worried that they may fry too long because they got fairly dark, but, came out nice and crunchy & perfect--not dry. I don't know if it makes a huge difference but, after I egg/coated the fish, I let them rest for about 5-10min. before frying--I just think they set up better. Served w/ tarter sauce.

Pasta with Tomato Cream Sauce

Winner Dinner! What a easy & wonderful tasting sauce. I used Classico Traditional Sweet Basil sauce. I loved the hint of nutmeg in the sauce (I used fresh grated nutmeg, so it may have been a bit stronger). Teamed with Fast & Friendly Meatballs from this site for a family pleasing meal.

Homemade Pan Rolls

These where pretty good. Made two times....the second time, I did follow the ingred. order from the reviewer above me and I think they did turn out better. 24 rolls worked perfect in my 9x13 stone casserole dish.

Quick Savory Cranberry Glazed Pork Loin Roast

This is one of those recipes that looked like you spent hours preparing it, but, in reality it is SO E-Z and quite fast (mine was done in a bit less then 45min.). My gang loved it. Next time I may double the sauce since most of it evaporated during cooking time.

Hot and Sweet Dipping Sauce

My husband & I went bonkers over this sauce when we used it with the 'Chicken Katsu' & white rice I make off this site. I only used 1 t. red pepper flakes & it was spicy enough for us. Excellent!!

Grilled Shrimp Scampi

The shrimp was good.......but, making a sauce made this a 5 star....so good! Sauce: Saute 1 stick butter, juice of 1 lemon, 1 T miniced garlic, 1/4 cup veg. oil, 1/2 t. red pepper flakes, and a splash of white wine. Add grilled shrimp and top over pasta. EXCELLENT!!!!

Tasty Meat Pie

4.5 This is very good 'comfort' food. :) I did use Tomato Soup as suggested by another reviewer in place of the Veg. Beef Soup. Also browned the beef & onion with fresh garlic. Added frozen peas at end. Instead of 2 pie plates, I used a deep 9x13 casserole & just placed a pie crust on top. I thought it was fine with just the top crust. Froze the leftovers & thought the reheated leftovers tasted just a good or better! This would be a good recipe to make ahead and freeze.

Harvest Salad

Made this for Easter....WOW....so good! I had to sub a few things in the dressing (used white wine vinegar and a different oil because that is what I had) and it still was really good! Will be making this again for sure. I'm going to buy the walnut oil because I'm sure it will even taste that much better with the right oil.
