Enchiladas

This was a good recipe, everyone at my house liked it! I did make the Red Enchilada Sauce (found in allrecipes.com) as some previous posters suggested & I think it would not of been as good without it---much better then canned Enchilada Sauce. The homemade sauce added a lot of flavor. I also added a package of Taco Seasoning to the meat. I put 1/2 the recipe in flour shells & 1/2 in corn shells--both where good! I will make this again. Simple to make!

Brown Sugar Meatloaf

Very Good. Both me and my husband like meatloaf so it was nice to have something different for a change & good! This was easy too. The best part was that my kids who won't eat my regular meatloaf did eat this and wanted seconds!

Split Pea Soup Atu

My husband Loved this soup! I'm giving it 4 stars, because if you like food with a 'bite' to it, you'll probabley like this soup. It was a bit 'hot' for my taste (with crushed peppers & hot sauce). I liked the addition of potatoes. The only change I made in the recipe is that I only used 1/2 the water and 1/2 the milk--which made the consistency perfect for our tastes.

Award Winning Soft Chocolate Chip Cookies

I am a huge chocolate chip cookie lover & I thought these where pretty good. They where easy to make & everyone seemed to like. Not my favorite, but, I would make again.

Irresistible Pecan Pie

Pretty good---but, I think the secret to a really good pecan pie is to use FRESH pecans. The pecans I used I do not think where fresh. The crust was very good & easy!

Ultimate Twice Baked Potatoes

Not a huge fan of twiced baked but, I thought these where good, a bit time consuming.......but, husband and boys LOVED them! Actually had some left over & they all loved them next day too! Next time I think I'd double the recipe and freeze extra.

Cream Cheese Won Tons

Yummy, excellent! I used crab meat instead because I had it on hand. But, next time I think I'll double the amount of crab. Also, I wasn't very happy with the brand of won ton wrappers I used---they where very small & I couldn't get much filling in them (the filling is so good you want a lot in each won ton!). Also, I used some in peanut oil and some in veggie oil & I did like the peanut oil better.

Big Cheeseburger Pizza

It was okay. I think it depends on what type of Thousand Island brand dressing you use (can't remember what I used, but, I didn't care for it--plus there was too much dressing for my tastes) and what type of pizza crust you use (I used a store brand, since it was all they had left--again didn't care for taste of crust with rest of ingred.). I may try again.

B.L.T. Salad with Basil Mayo Dressing

Yummy!! Both me and my husband had second helpings! Very good if you like BLT's. I did find it fairly time consuming to assemble and my kitchen was a mess afterwards! :) However, I plan on making this again.

Italian Confetti Pasta Salad

This salad was MUCH better the 2nd and 3rd day. I made a huge amount and served it the same day, I should of made it at least 1 or 2 days before (as recipe suggested)--the flavor was much better. I loved the amount of mayo dressing on the noodles (not too much) I did double the amount of noodles as many suggested. I also added a bit of cayenne pepper too. I will make this again, a nice summer pasta salad. Next time I'll try adding different veggies.

Roquefort Pear Salad

Excellent! Made this for a side dish at Christmas Eve dinner & everyone raved about it. It was very gourmet tasting and looked beautiful! Followed the directions, did not make any changes.

Kickin' London Broil with Bleu Cheese Butter

I'm giving this 5 stars because my husband and sons LOVED this recipe...infact my husband wanted me to make it again within a week. I personally did not like it. I sliced the leftover meat very thin the next night & used it for soft taco's & they loved those too!
