Classic Cuban Midnight (Medianoche) Sandwich

Reviewed: Mar. 3, 2009
Yummers! Made no changes to this recipe. Used Sweet Italian Hogie bread that Kroger sells. A great way to use up some leftover pork loin from a previous dinner. The boys LOVED!

Turkey Fried Rice

Reviewed: Mar. 2, 2009
Truly a fantastic way to use up left over turkey. I made a double batch, planning to have leftovers for lunch the next day....but, there wasn't any left. My kids LOVED it, gobbling it all up. I did use white rice (that is all I had) & used all the ingred. the recipe called for. In addition, this what I added: some seasame oil with the canola, frozen peas & green onions w/the egg & lettuce.

Grandpa's Classic Coney Sauce

Reviewed: Mar. 1, 2009
Finally, a coney recipe everyone in the family liked. I used ground turkey because that is all I had & nobody noticed a difference. I used a bit less sugar. So much better then the stuff you buy in the tube.

Chunky Monkey Pancakes

What a fun recipe! The kids loved them. They where hearty too...only took about 3 pancakes each to fill up my teens. Can't wait to make them at the next extended family gathering for our breakfast buffet.

Cheese and Bacon Potato Rounds

Reviewed: Feb. 28, 2009
These are tasty little things! Maybe not the prettiest for presentation, but, I bet if you put a plate of these down in a room of men they would be gone in seconds. Great idea for football parties, tail gating, etc...I had to sprinkle with a tad of salt, otherwise..Yum!

Cornbread Dressing I

Reviewed: Feb. 27, 2009
A terrific dressing but, kind of a pain to make--several steps & lots of dirty dishes..lol. To help with the time & mess element I made everything the night before and put together right before stuffing the turkey. I sub. one can of cream or chix soup for one broth and sauted my onions/celery in the butter. Made my own flavorful corn bread (which added to the mess). Wasn't sure if I would like the chopped eggs, but, glad I tried them--think they added to the dressing & will use them next time.

Fish Tacos

Reviewed: Feb. 26, 2009
These were excellent. The batter was light, the sauce fantastic. Cut the fresh cod in diagonal slices. The recipe calls for corn tortillas, but, we prefered the flour with these. The only change I made was to use 1/2 the pepper, but, next time I'll use close to the whold amount because it was not too hot.

Quick and Easy Chicken

Yes, lives up to it's name: Quick and Easy for sure! With ingred. usually on hand, it is a quick, tasty dinner. I think dark meat would be just as good or better with this sauce.

Quick Savory Cranberry Glazed Pork Loin Roast

Reviewed: Feb. 24, 2009
This is one of those recipes that looked like you spent hours preparing it, but, in reality it is SO E-Z and quite fast (mine was done in a bit less then 45min.). My gang loved it. Next time I may double the sauce since most of it evaporated during cooking time.

Papa Drexler's Bavarian Pretzels

Reviewed: Feb. 3, 2009
These scored big time with the kids & hubby! I still prefer the "Mall Pretzel" recipe for taste, but, these are MUCH easier & faster to make. These pretzels do not require any rise time. I made 12 small ones instead of 6 large

This has to be one of the easiest & tastiest 'frosting' type recipes I've ever made. Used with Black Magic Cake & Rick's Buttercream Frosting (both from AR). OH MY GOODNESS! Excellent cake for the chocolate lover.
