Chocolate Chip Cheese Ball

Oh, my...the woman's group I made this for LOVED it. Had several requests for the recipe. Did not have the mini chips, but, put regular sized choco chips in my chopper and used those. Had to let it harden overnight. Served with thin cappichino cookies & the graham pretzels from Tastefully Simple...yum!

Italian Spaghetti Sauce with Meatballs

This was very good. I did have to use a combination of canned tomato products (diced/stewed/whole--that's all I had), but, it didn't seem to matter because the sauce was very good. I simmered the sauce on low for several hours. Added the meatballs & rest of ingred. and simmered again for a few hours.

Spring Lime Tea Cookies

These were quite good. Making them smaller (1t) & baking on parchment paper helped. Definately more of a cake like cookie, not a 'melt-in-your-mouth' butter cookie--but, still good. Perfect for a tea...but, my kids & hubby actually loved them too.

Eggs Benedict Breakfast Pizza

My kids loved this. I'm not a huge fan of the canned rolls...but, had some I needed to use up. Next time I may try a different bread. I doubled the Blender Hallandaise Sauce on AR in place of the packaged stuff. The only change I would make is not cook it as long next time, it was done in about 15- 18 minutes. Perfect for a breakfast buffet!

Total comfort food...at it's best. So easy! I did flavor up the mashies quite a bit with 3 whole garlic, salt, pepper, some heavy cream & milk.

Sensational Sirloin Kabobs

Super! Hubby & kids really enjoyed these. I am not a steak eater & I thought they were quite good too. I ended up using Dales Steak Seasoning in place of the soy sauce (after discovering I was out of soy sauce). It was still really good with the Dales...but, looking forward to trying the soy sauce next time.

Really good and fresh tasting. The only change I made was only adding about half the water. Don't bother buying store bought---so much tastier. It was even better 2 or 3 days later.

Cilantro Chutney Chicken

This was quite good & a bit different from the run of the mill chicken type cream dishes. Next time I think I'll use boneless chicken breasts & cut them in chunks and add to cream sauce.

Old Fashioned Chicken and Dumplings

Good basic recipe. I thought it lacked a bit of seasoning. My dumplings where a bit heavy because I ended up adding all the flour to mine (Step 2 tells you to add flour and Step 3 tells you to add the reserved flour to thicken broth---unfortunally I didn't preread the recipe)...next time I need to remember to add less flour to the dumplings.

Crispy Catfish

This was an excellent way to prepare the fish. As a few of the other reviewers suggested I soaked the fish in milk for at least 15 min. & used garlic powder instead of garlic salt. I still thought it was a tad salty, but, everyone else thought it was seasoned just fine. I did do mine on the grill and was pleasantly surprised on how well it held up & did not fall apart. We loved the grilled taste & look forward to doing fish again this way real soon.

Byrdhouse Dream Salad Dressing

Don't waste your money on store bought dressings when you can make this up in a jiffy and tastes so much better! A nice fresh, crisp taste...really brings out all those veggies in your salad. I'm looking forward to use this as a marinate on veggies for the grill this summer.

Black Bean and Corn Salad II

This was very good. So easy to put together. I think it tasted better the next day. But, after marinating overnight, the tomatoes and avocado looked kind of funky. Also, next time I'll add another avocado.

Southwestern Egg Rolls

Fairly time consuming, but, yummy! As others suggested I think these would make really good appetizers using wonton wrappers instead & making each one much smaller. Also made the Black Bean and Corn Salad II and it served as a great side for the Southwestern Rolls.

Berry Shortbread Dreams

These were excellent. I used some homemade strawberry freezer jam I had & ran out of almond flavoring, so had to use vanilla for the glaze. The glaze did need more water between 1-2 T. I like shortbread a lot & this was a nice twist...the jam was so yummy with the shortbread cookie.
