When dealing with an expense cut of meat & all the ingred. to go along with it, I was a bit nervous about how well it would turn out. But, WOW....this was amazing. I didn't change a thing. Used a Tawny Port Wine. I made it for my husband's birthday and all his said thru the whole thing was "this is the best meal I've ever had!". I did put a meat thermometer in, but, my meat was ready at 25 min. as per the recipe --it was perfect. It was a tedious recipe, but, not difficult. I did double the sauce as some of the other reviewers suggested, however, I think we would of been fine with a single portion--there was quite a bit of the delicious gravy left over.
