Mock Tuna Salad

lol...it does look just like tuna salad! I don't think it tastes that much like it, but, it's not bad. I ate it on a bun, but, next time I'll use it to make a lettuce roll. As a healthy lunch alternative this is definitly a keeper.

Fruity Curry Chicken Salad

Yum...this was SO good! We love curry, so, I was temped to put more in, but, I'm glad I didn't because the next day the flavors really came through & it was just the right amount of curry powder!

Sour Cream Chicken Quiche

This was very good. I made it for dinner & everyone really liked it. I had to make a few changes since I didn't either have enough ingred. or none at all. Didn't have green pepper, so had to omit (but, I think it could of used it--even a red pepper). Didn't have enough cheese so sub. some grated asiago & cream cheese--tasted really good anyways. Served a veggie on the side. I think this may replace my old tried and true quiche recipe!

Honey Ribs

I was dissapointed in how these turned out. But, I think it was the cut of meat & the bbq sauce I used. It was very, very easy & the meat was fall off the bone tender, but, not spicy enough for us & the sauce was too thin.

Pretzel Coated Fried Fish

Followed the recipe, except used talapia instead of cod & boy where these good! Thought the seasoning was perfect. Was worried that they may fry too long because they got fairly dark, but, came out nice and crunchy & perfect--not dry. I don't know if it makes a huge difference but, after I egg/coated the fish, I let them rest for about 5-10min. before frying--I just think they set up better. Served w/ tarter sauce.

Turkey Roll-Ups

Baklava

After reading several reviews...I followed these helpful suggestions to make this baklava the closest to the consistency that I like. 1. I ground the nuts as fine as I could--very, very fine. 2. Made the syrup up earlier and let cool completely & then poured the cooled syrup onto hot baklava. 3. Did not over use the butter, tried to very lightly cover each sheet. I did use clarified butter a.k.a. Ghee--it allows for cooking with butter at a higher heat. This recipe will be a Christmas cookie staple from now on!

Middle Eastern Turkey Dogs

Pretty good. I liked, but, no one else was that crazy about it. I love shish kafta & these are kind of like it. I served the turkey tubes in pita bread (pulled apart so you just roll up everything in one side) with tomato, lettuce, tzatziki sauce & a thinly sliced pickle (like I get them back home). I would make these for myself again.

Turkey Goulash

Very good! The changes I made: sauted onion and green pepper in a little olive oil & then added ground turkey and browned. Doubled the amount of sugar and basil. Added a partial can of Rotel. I'm sure I added more garlic too :). I thought it tasted as good or better then goulash with ground beef.

Easy Baklava

This was very easy to assemble, but, somewhat time consuming. It cut very nicely and baked up perfect. Not nearly as good as what I get from a bakery back home, but, not getting any 'homemade' Baklava in our new area---this was very good. I only used walnuts & I ground them very fine.

After-Thanksgiving Turkey Soup

This was fabulous! Cleaning up after the Thanksgiving meal I threw the turkey carcass right into the pot and boiled the broth & finished making the soup next day--so easy. The only changes I made: I only used 1/2 c. butter (couldn't bring myself to use a whole cup--I'm sure the extra butter makes it richer) and only used 2 chopped onions. Good the first day, but, even better the second day! It is not a spicey soup...very mild with the cream. This recipe will be part of our day after turkey tradition!

Yummy Sweet Potato Casserole

This was a HUGE hit at Thanksgiving this year. I saw several people going back for seconds & even thirds! I didn't actually have any because I never cared for Sweet Potatoes ....but, I'm glad I finally found a recipe that everyone seemed to like. It was really easy too, I made mine the night before--and baked it right before dinner.

These are kind of hard to review because for taste I'd probably give it two stars. I thought they where not sweet enough and tasted kind of bland, the kids hated them....but, husband loved them, along with a few other adults I offered them to. Very easy to put together and set up well, plus they are so healthy! These are great for breakfast on the go, instead of the junk my kids want to grab--that's why I'm going to 'play' with this recipe and try adding 1/2 c. chocolate chips and/or some p'nut butter. I did end up wrapping each one individually and stored in the refrig.--I did think they tasted better after the 2nd day.

Toffee Chunk Cheesecake

Killer cheese cake! Made it for a special 50th B'day celebration. It was not an easy cake, because I do not make cakes very often. I did make some changes as suggested by other reviewers--like dividing the caramel (BUT, next time I will only save enough caramel to drizzle over top, because the top caramel layer made it too hard to cut the cake) & using chocolate wafers, also using a 10" pan (using 3c. wafers instead). Also, changed my cooking time to cook a bit longer. Did not add the toffee to the cheesecake batter as suggested by many--I like having the smooth cheesecake batter & the layer of toffee. I also made my own caramel sauce (only because I have a fantastic recipe) & yumm....it did the trick on this already killer cake. Allow yourself 1-2 days ahead to make it--I think it tasted the best the 3rd day.

Monte Cristo Sandwich - the Real One

Wow! Never made or had these before. My husband asked for these & said they were just as good or better then he has had. Probably will only be for a special brunch now & then, since they are deep fried w/ham, cheese, batter..etc....but, worth for a special treat. I doubled the batter to make 6 large sandwiches. I used a loaf of fresh Itlian bread you find in the deli & cut into large slices. Basically by the time I put the cheese and meat on the slices the toothpick fit perfectly. I did not quarter them & my swiss cheese didn't melt on the inside, but, no one complained--just raves. My kids would only eat them with the powder sugar (and loved them), BUT, DON'T miss using the current jelly sauce as mentioned by the submitter--actually I used rasberry since that is what I happen to have---husband and I agreed that final touch made the sandwich.

Sooooo easy & yummers! Prefect with some soup I made. The batter was so easy to work with-- not sticky & it made up a large amount. These will be a staple with soups & chilies.

Slow Cooker Chicken Taco Soup

This was so good! Much better the next day! Followed the recipe, except added some fresh cilentro. I liked it better with sour cream and/or cheese, but, hubby liked his w/o. Also used the seasoning as suggested by the submitter in a follow-up review (see below the recipe). Ohhh...and severed with the Cheddar Bay Biscuits from this site...Winner Combo!!

Honey Baked Chicken II

This was so good & so easy! As suggested by several reviewers, I doubled the curry (we love curry!) and only used 1/4 c. butter---added garlic. I had some skinnless/boneless thighs and breasts I needed to use--they both came out moist and tender. Served with rice & squash.
