Cherry Pound Cake

Nice flavor. Mine came out a bit dry & it only took 60 min. to bake. I did add some chopped pecans & wish I had added more cherries like others suggested. Also drizzled a glaze over top. This would be a nice cake to take to an event, because it would travel well.

Chicken Pasta Salad with Cashews and Dried Cranberries

This was good. I ended up using a whole box of pasta (12oz) because there seemed to be a lot of dressing (and I still didn't make up all the dressing). I did think that next time I'll either put cranberries OR grapes--but, not both. I used pecans because that was what I had on hand (I think cashews may have worked better with the flavor combo of this recipe). With a few changes to reflect our personal tastes, this will make a nice summer pasta salad.

Asparagus Chicken Crepes

Here is a recipe to make if you want to impress those future in-laws or the boss! It is gourmet quality, but, easily assembled in your own kitchen. I made it for Easter to rave reviews. It is super rich & fattening, so, it will probably only be served for special occasions--but, boy, it will be worth the wait! :)

Jay's Signature Pizza Crust

Wow! Nice crust...great to work with. I did prewarm my pizza stone before putting on the crust after 1st rise (sprinkled corn flour over stone and took a fork and punched holes around the pie)...then baked it about 5-7 min. and then added all the pizza toppings and baked until pizza was done. When it came out after the pizza was done, I seasoned the crust with olive oil/garlic salt/parm. cheese. Yum!

Buffalo Style Chicken Pizza

The boys LOVED this! Hubby couldn't stop eating it. I made 2 pizza's, one with the Blue Cheese Dressing and the other with Ranch Dressing---everyone liked both. Also used a combo of cheddar and mozzarella cheeses. I used Jay's Signature Crust recipe from this site.

Asparagus Quiche

Hubby said it was the best quiche he ever had. I thought it was pretty good, but, it seemed like it was missing a little something...not sure what. This would work real well for a brunch.

Oven Baked Potato Wedges

Made recipe just as suggested and found it to be very bland & had to bake the potatoes at 450 for about 30 min. I do think the recipe is a good starting point, but, next time I'll take the reviewers suggestions and add quite a bit more seasoning.

BBQ Pork for Sandwiches

Okay, this was about as easy as a meal is going to be! Not only easy, but, good. Hubby & kids loved it. I made the Tasty Buns from this site---yummy combo. And as an extra bonus this cut of meat is usually always marked down, so this is also a VERY economical meal. Perfect choice to feed a crowd.

Gerry's Chicken Enchiladas

These where really good. Time consuming but easy & well worth the effort. I opted not to add the sm. chili peppers...with the enchilada sauce I thought it was hot enough. I made half with corn tortilla & half with four tortilla (my kids only like flour). I thought the corn was much better...but, kids still loved the flour. I used the Red Enchilada Sauce recipe from this site. Topped with a dollop of sour cream and cilantro. This is a keeper!

Spicy Beef Curry Stew for the Slow Cooker

A tasty meal. Served over rice. Changes: shook cubed beef in zip-lock baggie with flour (basically, to thicken the broth--which it really wasn't very thick at all, but, worked out fine with the rice) before sauting in pan. Added a can of Rotel Tomatoes instead of regular diced tomatoes & jalapeno--because it was all I had--and it worked out well.

Tasty Buns

These buns where wonderful. They were really easy to make & held up well to the hamburger patty. I was able to get 16 nice sized buns. I think I just spoiled my family, they will want these instead of the store bought buns.

Creamy Chicken and Wild Rice Soup

This soup got mixed reviews from my family. I did saute added onion, celery and carrots in the butter. I may add some poultry seasoning next time. *Update* I also made this for a soup exchange (like a cookie exchange, only soups). The response I have received is only positive--they loved it!

Rosemary Ranch Chicken Kabobs

WOW...Excellent!! Changes: Marinated for several hours. Only used 1/2t. salt, and 1/2T. sugar. I think 2 T. of salt would make it way too salty (since there is already soy sauce & dressing). Next time I'll omit the salt altogether. Everyone...Adults & Kids loved this. Served with jasmine rice and veggie Kabobs sprinkled lightly with olive oil and sea salt.

Runzas (meat pies)

Our first time eating a Runze & everyone liked them. My kids loved them & asked me to make them for the school lunches. The dough was wonderful to work with. The only thing I would do different next time is double the filling, because the amount of dough was very generous.

Lime Chicken Soft Tacos

A winner dinner! I doubled the sauce & replaced cilantro for the oregano. Did not add the salt. Incredibly good! Used Amy's Cilantro Cream Sauce as an addional topping---hubby went bonkers! Total Yum!!

This dip was awesome. It did make a large amount (good for a party)--next time for our family I will cut it in half. I did not make any changes to the recipe, but, next time I may try using fresh garlic in place of the garlic powder. Used as a topping for the Lime Chicken Soft Tacos. Hubby went bonkers--he loved the combination!

Cranberry Pistachio Biscotti

First time making biscotti & this recipe could not have been easier or tastier. Very sticky dough, but, just keep finger wet as suggusted by recipe & it worked. I used walnuts, golden raisins & cranberries...because that is what I had on hand. Easily can add your own flavorings to make a sucessful biscotti.

Coconut Shrimp I

These where incredibly good! These turned out high-end resturant quality! I will preface by saying that I did use extremely fresh just-caught jumbo shirmp. I didn't change a thing in the recipe--the batter coated each shrimp perfect, the coconut just sweetened it enough. Hubby deep fried them out on our grill in a heavy skillet--make sure the oil is hot enough. I did make the sauce as suggested by the reviewer under the recipe: 1/2c. orange marmalade, 2t. grey poupon mustard, 1 t. horseradish sauce, pinch salt, honey to taste. Very good sauce.
