Herbed Buttermilk, Garlic and Parmesan Dressing

Reviewed: Jul. 14, 2008
This dressing was very runny. I made it for the Layered Spinach Salad--which it worked fine for. Next time I'll double to pour over the Layered Spinach Salad.

Layered Spinach Salad

Thought this was good, at least something a bit different to take to the pot luck. I made the Herbed Buttermilk Garlic & Parm. Dressing as suggested. I poured the dressing over top and let it sit over night.

Pesto Mushroom Chicken

Reviewed: Jul. 10, 2008
We thought this was really good. The only thing I found it to be a bit salty, next time I'll either decrease or omit the salt. It was so easy to prepare for such an impressive looking meal!

Watermelon Fire and Ice Salsa

Reviewed: Jul. 5, 2008
Something different and really tasty! Everyone loved at the July 4th party I took this to. The only change I made was that instead of garlic salt, I used part garlic powder and kosher salt and I also drained the diced watermelon for a few hours to help with the water content of the salsa.

Easy Ham and Cheese Appetizer Sandwiches

Reviewed: Jul. 5, 2008
Made these for a 4th of July party, and everyone loved them. The only changes I made was that I only made half the sauce recipe to spread on the 12 small buns. I wrapped all 12 buns in foil and baked in oven about 20min. or until cheese melted. Very good!

Truck-Stop Buttermilk Pancakes

Reviewed: Jun. 29, 2008
These turned out really good. I used part whole wheat flour, which I think made the batter thicker so I did have to add a bit more milk. I served with the "Absolute Best Pancake Syrup" from this site. Excellent combo!!

Sun-Dried Tomato Basil Orzo

Reviewed: Jun. 25, 2008
Very easy, and tasty (esp. the next day). I served room temp. & thought it was good. Kids did not like, which is fine because it leaves more left-overs for me the next day. :)

Absolute Best Pancake Syrup

Reviewed: Jun. 15, 2008
Excellent....but, dosen't look or taste like the traditional syrup (if that's what you are looking for). I think it was better! Just be careful to heat it in a pan that will be big enough, because when you add the baking soda it will bubble up and at least double in size before shrinking back down.

Bananas Foster Belgian Waffles

Reviewed: Jun. 15, 2008
This was a huge hit! Made it for Fathers Day and hubby (who is a Bananas Foster fan anyways) LOVED it. As govdivagirl suggested, I also made the Absolute Best Pancake Syrup. I also did not have any rum extract, so used Creme de Banana liquor instead. Hubby was just glad that there was enough syrup left over so he can use it for topping icecream later.

Pork Tenderloin in Bourbon

Reviewed: Jun. 11, 2008
We were disappointed, didn't like the marinate as much as we thought we would. Not to mention it was very salty.

Flavorful Flounder

Reviewed: Jun. 11, 2008
This did not work for me. HOwever, I think it was the fish & not the topping. My filets where not thick enough. Very easy for a quick meal. The topping was flavorful, just need to make sure you use the right fish(I don't think flounder has enough flavor on its own).

Garlic Broccoli

Reviewed: Jun. 11, 2008
WAY, WAY too much salt...be careful! And I usually love garlic, but, thought it had too much garlic too. However, super easy & still liked the oil base (instead of mayo). Will make again, but, with less salt and garlic.

Mashed Potato Soup

Reviewed: Jun. 6, 2008
What a terrific way to use left over mashies. A good basic recipe as is, but, you can easily 'doctor' it up a bit. I ended up adding fresh parsley, a teaspoon of chix bouillion, extra onion, extra mashies, grated some cheese into it and added bacon. You could really add about anything to suit your families tastes.

Strawberry Freezer Jam

This recipe is so E-Z and makes up quite a bit for a minimal amount of strawberries. The jam set up fine for me...followed the recipe as written.

J.P.'s Big Daddy Biscuits

Reviewed: May 31, 2008
As someone suggested, I made up ahead of time and wrapped in foil--sprayed with pam (in a tube shape) & place in refrig. for several hours until I was ready to use them. They turned out HUGE! Everyone really liked them with their strawberrys & whipped cream.

Amish Macaroni Salad

Reviewed: May 31, 2008
For a Macaroni Salad, this is really tasty. I did decrease the dressing amount by about 1/3 & haved the sugar amount. I ended up using ziti noodles instead of macaroni, because that is all I had. Hubby who dosn't normally even like macaroni salads loved this one.

Spicy Indian Chicken and Mango Curry

This was really good...but, unfortunally my kids weren't too crazy about it, so I ended up with lots of leftovers & froze them into individual servings.

Oven Omelet

Reviewed: May 15, 2008
Nice basic recipe. I made this for dinner so I added chopped onion, chopped red pepper, more cheeses (a combo of a few) & a few dashes of hot sauce. I used a 9x13 pan...so used 11 eggs, 2.5 cups of hash browns, 1.5 c. milk & extra of all the rest of ingreds.
