Fish Tacos Ultimo

This was excellent! We love fish tacos have had several different kinds....but, these are some of the best we have had. I made a few changes. Used halibut--we prefer halibut on fish tacos and it is easier to grill. Used greek yogurt and had to add about a teaspoon of powered sugar to sauce because I think the Greek yogurt and lime juice made it too tart. I also ended up adding a cube (1t.) of minced garlic. OH MY, the hubby couldn't stop dipping his chips into the sauce. Otherwise, prepared and used all other ingredients as listed.

Pesto Spaghetti Squash

We loved it. Made it a bit different since I didn't have all the ingredients--that said, it would still be just as good or better as is. It is the type of recipe if you keep the same spices you can switch out different veggies. This is what I did, which, I want to save changes so I can make again! Did not use kale or mushrooms...didn't have. Did sauté onions as stated and add spices called for. I did add the full amount of pepper flakes and found it to be a good amount of heat, but, not too much. Put squash mixture in bowl & added 3 cubes of frozen basil (from Trader Joes)...because I had no pesto. Added more Parmesan cheese then called for. Served with grilled chicken. Next day cut up left over chicken into left over squash--warm and just as good or even better!

Easy Greek Yogurt Cucumber Sauce

EXCELLENT!!!! I have made several different tzatzitki type sauces and by far this is the best one I have found. I marinated chicken & used this sauce...we loved it! It tasted better day 2 and 3 too. I ended up using about 3/4 greek yogurt (that was all I had) and 1/4 sour cream (all I had left) and it still turned out really good.

Homemade Flour Tortillas

These turned out awesome. I was a bit skeptical at first, but, they where soooo easy! There will be a leaning curb on the shape, but, practice makes perfect.

Yummy Honey Chicken Kabobs

Yes, YUMMY, YUMMY Honey marinate! Didn't do kabobs, just chicken breasts marinated for several hours. Made veggie kabobs & marinate just as good on them. I will say I used high quality chicken breasts & I think that helped put this marinate over the top!

Curried Butternut Squash and Pear Soup

Very good...did not change a thing. Made it for a Thanksgiving '11 starter. I made it the day before and before serving rewarmed and added cream then. I prefered it with the cream. Could really not have been any easier...but, is like a soup you would get at a high end restaurant.

Salad with Egg Dressing

Not at all what I expected...I didn't read the recipe before making it and was thinking the eggs would be hard boiled, making the dressing more like an 'egg salad' taste with mayo--heavy and a little sweet. It is not like that at all...it is very light!! This would be fantastic on fresh greens in the spring. It is also SUPER easy to throw together. I really liked it a lot and can see making this quite often---esp. come spring time. The reason I gave it 4 stars is that hubby said it was just 'okay'.

Spinach and Goat Cheese Salad with Beetroot Vinaigrette

This was very good and a nice change of pace from some of the regulars we always have. Not to mention very easy to throw together. Who knew the combination of ingredients (chicken bouillon?!? with pickled beets?) in the dressing could result in such a tasty vinaigrette. I made a few changes to the salad part because all I had was feta and blue cheese....hubby had the feta and I had the blue cheese....we liked both! I also didn't caramelize my walnuts---didn't want the added sugar. Again, thought the raw walnuts where just as good. However, I'm sure the original recipe would even be better with farmers cheese and caramelized walnuts!

Horseradish and Yogurt Crusted Salmon

This was very good and easy. My husband would probably give it 5 stars....he really loved it. Instead of the spray I drizzled a little melted butter, otherwise I followed recipe. I did not cover it, but did broil it a few minutes at end to brown top.

Sugar Glazed Walnuts

Worked out great...Sugar Glazed as promissed. I only needed half the recipe so I put it in the micro and every 20-30 seconds stirred. It was like a syrup for every stir and then finally (about 3 min. into it) it turned within 20 seconds to sugar glazed...so I can see if you are not watching this, how it can burn quickly.

Sweet Summer Fruit Bruschetta

What a great appy to serve a bunch of women! They loved it. My first time making a bruschetta of any kind. Ended up using a french loaf sliced in fairly thin peices---next time I think I will try broiling on one side and turning the slices over adding the butter/brown sugar mixture and broiling on that side. I was afraid the fruit mixture would soak thru making the bruschetta soggy, but, it actually held up well. I used the "Sugar Glazed Walnuts" recipe on AR.

Fresh Southern Peach Cobbler

Whiskey Marinade

Marinated some steak kabobs in this marinade & the men in my life loved it. I had to sub dijon for a combo of honey mustard and spicey brown mustard since that is all I had. Will be using this recipe again!

Chicken Enchiladas II

I'm giving this 5 stars only because the hubby and kids loved this recipe. It also was so simple and quick to put together. Me not so much....I prefer a red sauce and not a fan of 'can of anything' soups. Made the dish up and left the house for a meeting and 3 people ate the whole 9 x 13 pan...leaving me only a quarter of an enchilada....guess they really liked them!

Texas Chicken Quesadillas

Had left over chicken & tortilla shells from some Chicken Enchiladas I had made so thought I would make these for an easy dinner a few nights later. My kids LOVED them and SO EASY too! My chicken was already cooked...so just added bbq sauce and warmed. Made these on my panni maker instead of baking. On mine I did not add cheese and used a whole wheat tortilla and it was still very yummy.

Thai Spiced Barbecue Shrimp

Big LIKE! Wow...really good and easy. There is a suble curry flavor, so if you are not a curry lover you may not like this as much. Hubby said it was just "okay" but, he isn't a curry fan either. I will be making this over and over again this summer.

Marinated Grilled Shrimp

This was so good and so easy. I had to make a few ingredient exchanges since I didn't have on hand what was orginally called for in the recipe. Used about 1 T. tomato paste from the tube (it is much more concentrated then from canned paste) and used apple cider vinegar.

Delicious Black Bean Burritos
