Hi Fellow Foodies: I am married to a great guy almost 21 years. We are having fun raising our four teen age boys. I have enjoyed making so many wonderful meals from All Recipes. Also getting lots of good ideas and suggestions from the Recipe Exchange.
My favorite things to cook
I will attempt to cook about anything. I like to try different things all the time. Lately I've been into making breads and rolls.
My favorite family cooking traditions
Every Christmas we do a 'Progressive Dinner' with all the aunts/uncles, etc...Each home hosts part of the meal, giving the hosts an opportunity to show off their cooking skills and their holiday decorations.

Club Chicken Casserole
Thought this was pretty good. A very nice subtle rosemary flavored cream sauce. I made it because I happen to have most of the ingredients and didn't have to use cream of chicken soup! Changes: used orzo (because I didn't have rice)...I thought the orzo was good with it. Used fresh mushrooms (didn't have canned). Doubled the amount of green pepper and cut in strips. Added more rosemary (I'm sure fresh rosemary would be wonderful!). Was tempted to add onion, but, thought it might fight with the subtle rosemary flavor....so, left it out.

Fish Tacos Ultimo
This was excellent! We love fish tacos have had several different kinds....but, these are some of the best we have had. I made a few changes. Used halibut--we prefer halibut on fish tacos and it is easier to grill. Used greek yogurt and had to add about a teaspoon of powered sugar to sauce because I think the Greek yogurt and lime juice made it too tart. I also ended up adding a cube (1t.) of minced garlic. OH MY, the hubby couldn't stop dipping his chips into the sauce. Otherwise, prepared and used all other ingredients as listed.

Pesto Spaghetti Squash
We loved it. Made it a bit different since I didn't have all the ingredients--that said, it would still be just as good or better as is. It is the type of recipe if you keep the same spices you can switch out different veggies. This is what I did, which, I want to save changes so I can make again! Did not use kale or mushrooms...didn't have. Did sauté onions as stated and add spices called for. I did add the full amount of pepper flakes and found it to be a good amount of heat, but, not too much. Put squash mixture in bowl & added 3 cubes of frozen basil (from Trader Joes)...because I had no pesto. Added more Parmesan cheese then called for. Served with grilled chicken. Next day cut up left over chicken into left over squash--warm and just as good or even better!
