Curried Carrot Soup

I used Penzy's hot curry powder - if I make it again, I'll likely cut half of it with Garam Masala instead of the full on curry powder. I should have known better! Soup tends to separate, but a good stir gets it back to consistency. Perfect meal for a cold winter's night and made my house smell so good!

Delicious Black Bean Burritos

With some modifications suggested by others, it was a winner. The cream cheese is genius! I used 1 medium onion, 1 medium red pepper, a can of Rotel, 2 cans of black beans, 8 oz pkg. of cream cheese, a cup of frozen corn, 1 t. Cumin, 1 t. Chili powder, 3 t. Of garlic and a 1/4 cup of cilantro. Yum, yum, yum! topped off the burritos with salsa and sour cream and it came together in about 20 min, including prep time. This is going into the regular weeknight dinner rotation!

Corn Muffins

I have tried several corn bread recipes, but this one's the best. When my mom made corn bread for us growing up, it was always dry. I knew that couldn't be right! This recipe proves that wrong. Make sure you eat them in the first 24 hrs though, or they do dry out.

Truck-Stop Buttermilk Pancakes

I've never made pancakes forms scratch before, but I had some buttermilk to use up and the rest of the ingredients on hand. These were amazing! The perfect start to Christmas Day! Perfectly fluffy and moist enough to not need a ton of syrup. I'll never make from a mix again!

Simple Spinach Lasagna

I like any lasagna recipe that doesn't require me to precook the noodles! However, I did run out of sauce, so I would increase the liquid by a cup and a half. I like more sauce/vegetables than cheese, so otherwise, this was a good recipe for me. If you don't love spinach, this is not the recipe for you. But if you do, this is super easy to make! I substituted ricotta for the cottage cheese and 2 T of dried parsley instead of fresh. Thought it was great with some extra shredded mozzarella on top!

Vegetarian Chickpea Curry with Turnips

I made some changes, most notably using potatoes instead of turnips and reducing the amount of curry powder used. I have a spicy curry powder, so only used 1 T. I did drain the chickpeas, and rinse, because I don't like the taste of the liquid. I added water to the recipe, but it still burned to the bottom of the pan a bit. I added a half cup of light coconut milk at the end, which I thought really added to the richness of the recipe. I served it over quinoa...the flavor ended up being lovely, but I wish it had been a little more liquidy. If I make it again, I'll adjust it further.

Garbanzo Tomato Pasta Soup

I liked that it was so excited and used pantry items I already had on hand. I did sub navy beans for the chickpeas, because I didn't have those and it was still good. However, the flavor is pretty one dimensional, probably because the flavors didn't have time to get develop. I would saute the herbs with the onions & garlic next time and make my own broth. Otherwise, yum!
