Pistachio Chocolate Checkers

They look elegant and fun, but they aren't particularly sweet or soft. Presentation: A. Taste: C. They weren't bad, but the chocolate overpowered any sense of pistachios. Also, to cut down on fat, I used 3/4 cup butter for each colored dough, and you cannot even tell the difference. Also - chill them in the freezer; they don't chill very well in the fridge, even after 2 hours.

Hot Cross Buns I

They were a little dry and I missed the orange flavoring of more traditional hot cross buns. Unlikely to make again. Make sure they have fully cooled before putting on the frosting to prevent it from running all over.

Grilled Garlic and Herb Shrimp

Decent and easy. The flavor really soaks into the shrimp. I also used to marinade scallops, and the result is a more subtle, gentler flavor.

Dad's Steak Rub

Easy, delicious marinade that has become a staple at our house. You MUST use real maple syrup - if you try to alter the recipe by using pancake syrup, your meat will burn. I use this as a marinade - stab the steaks with a fork a few times and the flavor will flow right through. Perfect for grilling all kinds of steaks. The result is a tender, succulent morsel that almost melts in your mouth.

Garlic Cheese Biscuits

Delicious. I added the garlic powder to the dough and then used melted butter + 2 cloves minced garlic + teaspoon parsley to coat the tops before cooking. The parsley adds color and the garlic is at just the right level. I rolled them out and shaped cut out the biscuits instead of making them "drop" biscuits (for prettier presentation). My mum loved them.

Peach Praline Muffins

My mom loved these. I'm not a fan of pecans, so I would have given it a 3. However, my mom's palette overrides my own. It takes about 3 peaches. I recommend using fresh. The cook time recommended is perfect! Thanks for the recipe. :)

Gnocchi I

When boiling the gnocchi, be careful about them getting stuck on the bottom of the pot - stir them a few times. Mine were a bit heavy - I may have overkneaded the dough. Tip to shape: lay a fork with the end of the prongs of the fork on the table. Take a piece of the gnocchi and flatten it on the prongs. Then roll the dough (like a tiny jellyroll!) downward. That way, you'll have little grooves to catch the sauce.

Delicious. I used normal cream cheese and1% milk. Minced=chopped small. Very light and *really* easy and quick to make. You can make them in different shapes than squares - triangles like scones, circles like biscuits - whatever suits your fancy. I made 9 squares.

Marinated Baked Pork Chops

I'm not sure what happened. I doubled the sauce, pursuant the suggestion of other reviewers. I cooked 3 pork chops. While the flavor was ok, my chops were a bit dry. I cooked them 55 minutes, and kept them covered with foil 50 of those minutes. Might be attributed to the fact that the chops were frozen and not fresh, but in the end, I didn't get the juicy result of other reviewers. I may give it another try one day.

Zucchini-Chocolate Chip Muffins

Makes about 30 mini muffins. They were ok - you can't really tell they have zucchini in them. Easy and quick to make, but nothing spectacular. I would add a touch of nutmeg or pumpkin spice next time - they needed just a tad more flavor. If you're looking for a quick & easy way to use your garden's bounty, this recipe works well.

No-Cream Pasta Primavera

Don't worry if you don't have the required veggies; any veggies will do. I used pattypan squash, zucchini, yellow squash, and 1 regular tomato. This is a quick, easy, and tasty dish. ---------------------- UPDATED: I often use this recipe now to just make roasted veggies - they are delicious on their own and quicker than the full pasta dish. :)

Stuffed Pattypan Squash

It was ok. I used another separate squash in order to create more filling. I added the Parmesan on top. It was more work than I expected. All of the bacon grease gets soaked up in the stuffing mixture.

Easy to make and it is nice that you can prep it early. Be careful about cooking it more than about 8 minutes; the underside will burn without you being able to realize it. Very tasty, but next time I'll broil it at 450 in the oven.

Speedy Salmon Patties

I doubled this recipe, and don't recommend it. It ended up being far too salty. Next time, I would omit the 1/4 teaspoon and rely on the saltines for the salt. So if you double it, omit the salt.
