Scandinavian Almond Bars

Easy to make. I divided it into three batches so they were thicker (although I also ate a lot of the dough). These are very elegant and much easier to make than appears. I left off the icing, as I found they were sweet enough.

Princess Cookies

Very good. I didn't have any lemon zest, so I substituted 1/4 teaspoon of lemon extract. The cookies were soft, moist and very lemony (in a good way - the flavor, not the sour). I would make these again.

Great Pumpkin Dessert

Very flavorful and moist. I just added everything into one bowl and mixed (excluding walnuts), poured the mixture into a 13 x 9 pan and sprinkled chopped walnuts on top. It is very good - almost creamy. Would recommend for ease, quickness and taste.

Baked Whole Cauliflower

Delicious! I made the whole process easier by microwaving the cauliflower for 8 minutes (with a bit of water in the bowl). To make it healthier, I cut up the cauliflower into large pieces and placed them on a roasting pan. I sprayed them with canola oil PAM and sprinkled them with the bread crumb mixture (in which I omitted all of the butter). Tasted great!

Melt - In - Your - Mouth Shortbread

Very light, airy and they do melt in your mouth. Crisp outside with a light center. However, you NEED to put an icing or glaze on them, because without it, they are tasteless. I recommend mixing 1 cup confectioners' sugar, 1.5 teaspoon almond extract and 2 teaspoons milk. You'll have a little glaze left over.

Applesauce Bars

The frosting is overly sweet. If you make it - use only 25% to 50% of the frosting and drizzle it - don't spread it. The bars themselves are very moist and would be good alone, sprinkled lightly with powdered sugar.

Creamy Caramel Flan

Delicious. I prefer the less eggey consistency of this flan. I did not have any problems with the caramel. I also sprayed PAM on my pan, which might have helped. Either way, the caramel will breakdown in the fridge and become a sauce, so don't worry if you have problems. I used a 9" cake pan. Very easy to make.

Thimble Cookies

Delicious. The dough is not super sweet and the jam provides just the right amount of sweetness. The cookies are pretty, and unlike other jam topped cookies I have tried, the dough for these permits you to make good sized indentations. The cookie itself is like shortbread and is fairly delicate. It is not a hard or truly time consuming recipe either. I would definitely make these again.

Golden Yam Brownies

Very very moist and flavorful. I used 3 eggs and 1 egg white and only 1/2 cup of the white sugar, and am glad I did. It is already sweet enough, and more sugar would have made it worse, not better. The glaze is important - don't skip it!

Easy Cheese and Garlic Scones

Delicious. Tip: If you don't have self-rising flour, for each cup of self rising flour, substitute 1 cup normal flour, 1/4 tsp salt and 1.5 tsp baking powder. I used it and it worked out marvelously. Very quick and easy recipe.

This is ok. Next time I will use cooked fresh spinach- it would make a huge improvement in taste. Tip: Don't try to make a full proper triangle on your first "turn" of the phyllo dough; you can add much more filling if you make a psuedo pita pocket the first turn. Subsequent turns will create a full triangle so no filling falls out. The best thing about this recipe is SnappySpoons' process - you can put any filling into this and have it turn out good. For example, at the end, I ran out of the spinach mixture I halved the recipe and did not have feta so increased the amount of the other cheeses. The filling needed some zip and was dryer than expected. I sauteed the garlic prior to using.

Grilled Bell Peppers with Goat Cheese

Very good. I didn't have lemon pepper, so I just used pepper. It's missing *something.* Other seasonings - cajun, etc. - would also go well on it. I did not have a grill, so used a George Foreman Grill.

Chocolate Decadence Cake I

Much too much. I love chocolate, but this was almost like eating slices of gooey fudge. I had to cook it much longer than called for and evern then I questioned whether it was truly cooked. Would be good to cut into small squares and place in mini sized cupcake cups for bite sized tasting.

Chocolate Banana Cream Pie

The base cream layer did not congeal properly, despite following the recipe's instructions exactly. I had to add additional corn starch. The chocolate layer likewise de-congealed in the fridge after a 5 hours in the fridge. Would not make again.

Cornmeal Cookies II

These remind me of Russian Crescent Cookies. The cornmeal gives it the slight coarseness the ground walnuts give the Crescent Cookies. Like another review said, don't cook over 14 minutes. They will harden more once out of the oven. Great bite sized treats and addictive.

Raspberry Walnut Baked Brie

Just did not work for me. You could not taste the raspberry flavor and the puff pastry did detracted from the flavor of the cheese. Very pretty presentation though.

Haha. I made this with 1 tablespoon of chicken bouillon, instead of chicken stock - and it still tasted good! If you opt this route, cut down to a 1/2 tbs of bouillon and don't add salt. I would also cut down on onions next time - too much onion flavor.
