Creamy Au Gratin Potatoes

I'm constantly asked to make my version of this recipe. Here's what I do differently that I think makes it better. 1. No onions. (I think they just get in the way of the potato and cheese flavor) 2. Make extra cheese sauce (I think an extra half recipe of sauce will do it) 3. Put extra cheese in the sauce. (at least an extra half cup, but to your taste) 4. Layer cheese sauce between layers of potatoes. (make sure to grease the pan well or it's hard to get off after baked) 5. Sprinkle bread crumbs on top for extra crispiness. I made two huge pans of this for a party with 30+ people and it all went. Definitely a favorite of mine.

Chicken Enchiladas I

I made this recipe again for my hubby and he loved it, even more than Don Pablo's enchiladas. We're on a diet, so to make it a little healthier, I used whole wheat tortillas, 2% milk cheese, and light sour cream. Plus I used red peppers instead of green because I like them better, and put the onions in the skillet with the chicken because I like them well-cooked. Oh, and about the water - I didn't need it, but the onions I used were juicy and I had thrown in a few tablespoons of lime juice for flavor.

Microwave Baked Potato

I love to make this with yukon gold potatoes, 2 tsp light butter, and lowfat shredded cheese for a quick diet side dish while my hubby makes something on the grill. This has been my standby solution for quick potatoes!

Garlic Salmon

I've made this recipe twice and it's turned out great both times. One of my guests said "You know salmon is cooked well when you can eat the skin and not even notice it." On the second time, I made a few modifications - I put the salmon directly in a glass pan that had some oil on the bottom to keep the fish from sticking. I still covered it in foil. I wasn't able to get fresh dill at the store this time, so I sprinkled dried dill weed on the fish. It still turned out fantastic. To present the fish nicely, I recommend using a glass dish, cutting the salmon into single serving pieces, placing a slice of lemon on each piece (this may require more lemon) and a sprig of dill on each lemon.

Red Wine Marinade

I enjoyed this marinade and found it flavorful and easy. I substituted an herbal blend for the oregano, and that added even more flavor.

Egg Roll Wrappers

My wrappers kept cracking. I honestly have no idea if I cooked them too little or too much, because the temperature suggestions made no sense. The ingredients may have been right, but without better instructions on how to cook them, it just won't work.

Fried Rice Restaurant Style

It was easy, but perhaps too easy. My rice turned out "too sticky" (my opinion), and "too eggy" (my husband's opinion". The seasoning wasn't that great either, and I guess it was partially my fault, but suggestions or proportions for the soy sauce and sesame oil might have been nice. I wouldn't make it again. It wasn't terrible, but it wasn't that great.

Chicken Noodle Soup II

I like this recipe a lot, though I can't imagine ever making it quite as it is listed. I like to use this recipe for noodles, and then the recipe "Awesome Chicken Noodle Soup" for the broth, and then improvise on what goes in. The noodles from this are really great - just like my grandma used to make.

Baked Ziti III

Just made this recipe this past weekend for company, and it went very, very well. My company said it was the best they ever had. I made a few minor substitutions/changes: shredded mozzerella & provolone blend instead of the slices, put the sour cream on top of the cheese - enough to coat it, used Cabernet Marinara sauce for that extra kick. Mine never really "bubbled" but it was done nonetheless - I checked for the parmesan to melt and I saw liquid at the bottom boiling. Also, I made up the casserole the night before and just baked it the next day, which went just fine. I would definitely recommend this recipe, and have already given it out to my company!
