Spinach-Stuffed Flounder with Mushrooms and Feta

Excellent!!! I added chopped tomato and per the reviews I added garlic, and probably 1/2 cup feta. I also coated the fish with mixture of bread crumbs, Paul Prudome Seafood Magic and Tony Cachere's creole seasoning. I covered it with lemon and butter. You must drain off the moisture from the stuffing mixture (I may even strain it next time) or you will have a mushy problem. I baked it longer than 20 minutes--maybe 30. It was so good--and healthy!!!

Cream Cheese Sugar Cookies

This is an easy recipe, and cookies are good. I had no problem rolling it out and cutting the cookies--I floured my surface and patted flour on the dough. I didn't chill it for 8 hours though, just maybe 1-2 hours-it gets pretty hard. I wanted to do something fun with my 5 year old and this was a fun little project for her with cookie cutters and sprinkles. To get 72 cookies though, you would have to have very small cookie cutters b/c we only got about 2 dozen cookies. I did not think the cookies were 'to-die-for' good. If I do it again, I will not add the almond extract as I think it is a little overpowering. Maybe frosting them makes them way better, but that is more work than I want to get into.

Walter's Chicken and Mac

Thanks for such a great recipe!!! My 5 year old asked for seconds which NEVER happens. I made the following changes-used only 1 cup of shredded cheese, added a can of Nacho Cheese Soup, used 1/2 cup milk and 1/2 cup half and half, added green onion, and covered with American Cheese. I boiled chicken breasts with taco seasoning and garlic salt. There are lots of ways you can take the basic idea and make several different dishes--definitely a keeper!

Slow Cooker Macaroni and Cheese I

This recipe is getting a really bad rap! I've done it in the oven and I've done it in the slow cooker. Slow cooker is definitely better. I think for this recipe to be at its best, one needs to have one of those medium sized (3 quart?) crock pots. I have one of the 6 quart ones so I only let it cook for 2 hours. I did not add the eggs, I cut the cheese to three cups, I did not cook the macaroni first, and I used spicy paprika. My husband loved it, one half of my toddler twins loved it, my 4 year old woudln't eat it. I think it is a good side dish and will definitely make again.

Slow Cooker Beef Stew I

This is a great recipe. Regarding Corrine's suggestions, I just thought that was way too much work. I use a slow cooker so I can do things fast and I did not want to invest that much time. Having said that, I did flour the meat and saute it, but then I just dumped everything in the slow cooker as the recipe said. I added 1/2 cup red wine, thyme, and rosemary, and I used HOT paprika. It really was delicious. I think next time I will use a can of golden mushroom soup too. I might have liked a little more juice. Even with the added spice, my 2 year old twins really liked it.

Spaghetti Ham Bake

This was superb!! I had to improvise with a few of the ingredients b/c I only had one can of cream of chicken, so I used a can of cream of celery-I did not have the olives, and I did not have fresh mushrooms so I used canned. I bet if made exactly as it is written I'd have to find six stars. But I tell you, the spices made it so good--a lot of similar recipes are rated as bland--this is so tasty-my husband LOVED it. It is a lot of ingredients, but not hard at all. I did not have two 11 x 7s, but there is enough that I put some in a 9 x 9 and froze that and the rest in a 9 x 13. YUM YUM-thanks!

El Dorado Beef Casserole

My 15 month old twins, my 4 year old, and my husband all loved it!! I used protein crumbles to cut the fat and fat free sour cream and cheese. Next time, I am not going to put the chips on it b/c I don't like the way they baked on top.

Cucumber Soup I

Excellent! Definitely love it with the dill. I skipped the butter part, and just used fat free cooking spray, which brought my weight watchers numbers down to 1 point using fat free sour cream-delicious! I also added a few dashes of Tobasco.

Vanilla Ice Cream I

I really like this recipe-itis a good basic ice cream recipe. I made it a few times and I used egg beaters and fat free half and half instead of heavy cream. I did not whip it either. I tried using Splenda instead of sugar, but it was not as good. It was just good to be able to make a fat free ice cream that was delicious!

Microwave Pralines

This recipe is awesome!!! First of all, this is so easy. I made pralines "the other way"-on the stove with a candy thermometer--never again. Second, the pralines melt in your mouth, are not grainy, and are not too sweet. I did have to perfect the recipe to my microwave, however. I had to microwave for a total of 12 minutes, and I did not stir for the whole three minutes. I also must make my pralines too big b/c the most I ever got out of the recipe was 28. I made this about a dozen times this year for Christmas gifts. It takes me 20 minutes start to finish. Thanks!

The Best Corn Bread You'll Ever Eat

This does make a very moist cornbread with a wonderful, crispy crust. It turned out delicious, but I did do a little doctoring b/c the batter was very bland--I added 1/4 cup sugar, some Tony's Cacheres, cayenne pepper, some melted butter, and another egg for good measure. I had to cook it about 45-50 minutes. It was pretty good, and we had it with chili.

Roasted Pork Loin

This was really good. My husband loved it. I served it with garlic mashed potatoes, and gravy from the drippings and wine was fabulous. I had a 4 lb. boneless pork sirloin roast, and it was very tender and juicy, but b/c of the weight, I increased the amount rosemary and garlic and the rosemary was a little overpowering. So next time I will do the exact measurements.

Chicken Andouille Gumbo

This was great! The only thing I did differently was not add the file powder-I believe that if you have okra, you don't need file-at any rate, it was great. I'm from Louisiana so I know my gumbo! I also just used a hot link sausage-they don't sell andouille where I live.

Hungarian Pork Chops

YUMMY! First of all let me say that I heeded the warnings and used less ketchup, cooked it less time, and put the sour cream in at the last 5 minutes. Also, I sauteed some onion and garlic with the pork chops, I used hot Hungarian paprika, and increased the amounts of worchestershire sauce. This was excellent! Contrary to others, this smelled great and I served it over egg noodles. I will definitely make it again! Thanks!

Chicken Florentine Casserole

This recipe is in the top 5 best dishes I have ever made/tasted. It is so good, that I would serve it to guests. My husband loved it as did my 2 1/2 year old. The only thing I did differently was use frozen spinach as opposed to canned. Excellent with squash and a salad with Italian dressing!

Dill Cucumber Dip

I have made this dip about 6 times this summer, and it has been an absolute hit everytime. I have used fresh cucumbers from the garden and cucumbers I bought from the store. Of course, fresh is best but it was still good with the store bought cucs. I've used fat free ingredients as well and it was still really good. I did use about 5 times as much dill as what this recipe calls for--the 1/2 a teaspoon just was not enough. I serve it with salt free mini pretzels--everyone loved it!
