Authentic Mexican Tortillas

These came out tasting like baking powder! I called my Mexican mother-in-law and she told me to use only a pinch of baking powder and a pinch of salt. Also alittle more shortening (about a half cup to each cup of flour). She said the dough doesn't need to rest either. Make sure to roll out almost to the point of breakage (paper thin),they should be rolled out a bit oversized as they will shrink when cooked. They only need about 30 secs. each side then place in a large ziplock and reheat another 30 sec. when ready to eat. These were so authentic! Not the healthiest but a good change from store bought!

Slow Cooker Beef Stew I

Very good! I used 4 cups of chicken broth (had no beef) Not sure 1 1/2 cups would have been enough? Added sweet potato, garlic powder and onion powder. I also added 1 tbls of organic soup base. Cooked on high 9 hours, I think 8 would have been perfect. served with homemade rosemarry bread! Yum!

Green Salad with Cranberry Vinaigrette

I love this dressing....I add about 2 tbsp sugar. I like to pickle my onions for about an hour with red wine vin, white vin, alittle sugar and water. I added jicama to salad. YUM!

Spinach and Rice Alfredo

This was so different than all my other rice recipes. It was so tasty! Paired it with steak. I added extra spinach, and some extra salt at the end. Next time I might add some peas.

Tofu Lasagna

I give 4 stars because of my modifications. I sauted minced onion, carrot, bell pepper and garlic which I added to the tofu mixture, as well as one pack of spinach. I used 1/2 jar sauce in mixture and the rest for my layers. I omited the milk and used no boil noodles. I made 3 layers, each time adding sauce to the top of the cheese. I coated the bottom of the pan with sauce first. I cooked 40 min covered and then 5 min uncovered. WOW! turned out yummy!! I don't think the kids will be excited with the spinach, but its good for them, right! Turned out being a cross between a lasagna and a quiche. Tofu....what tofu....no one will know the difference! This is one you can really play with.

Coconut Cream Pound Cake

This was good, not the best pound cake I have tasted. The coconut adds a nice twist. Needed 15 more min as I used a bundt pan. Cut sugar by half a cup, as per other reviews. Kids approved. Maybe I will add crushed pineapple next time and a little vanilla :)

Kickin' Collard Greens

Very good! I transfer mine after the 45 min to the slow cooker on low for an additional couple hours. This softens them up and soakes up all the flavor. YUM!!

Crepes

Amazing! I have always wanted to make crepes but thought they had to be difficult. When I saw this recipe it seemed so easy. I watched a you tube video on it and then attempted my crepes. Wow....easy and delicious! My partner was amazed! Will make again and again. Maybe will try butter next time.

Good Old Fashioned Pancakes

These are great! I added vanilla and another 1/4 cup of milk, (batter was thick) otherwise made as is. very good. Keeper! I warmed milk, added melted butter to it then tempered in the egg, then added to dry inger.

Italian Dressing Mix

This was a great base recipe. As per other users I reduced salt to 2 tea. I used red wine vinegar. No celery salt so I ground up a pinch of celery seed. Next time I will cut back on the oregano, very overpowering. My kids helped make this and loved it on salad!

My Chili

This chili is so great and simple. Alot of other recipes are way over the top. I like to blend 3 cans of the stewed tomatoes for a thicker sauce. I add 1 can pinto beans and half a small can fire roasted mild chile. I cook everything down and then transfer to the crock pot on low for several hours. I add fresh jalapeno individually. Over a baked potato....mmmm!!

Banana Crumb Muffins

These are good, but not the best. I followed recipe just adding alittle vanilla to wet mixture. These were a little dry for my taste. Next time I would add more banana and maybe one more egg. I am used to my banana banana bread recipe from shelley albeluhn, now that bread is moist. On the flip, kids loved them!
